What is In This Bean Dip Recipe
Refried Beans – A can of refried beans is what you need, or you can make homemade if you prefer.
Cream Cheese – Make sure to allow the cream cheese to be softened. That way it mixes with the other ingredients.
Sour Cream – The sour cream adds a nice tangy and creamy component to this party dip.
Rotel – This is diced tomatoes with green chiles. If you don’t want Rotel you can for sure skip it. We find it adds a nice layer of flavor.
Taco Seasoning – Use homemade taco seasoning or packet. Either works, and will help to elevate the dip for a flavorful final result.
Pepper Jack Cheese – Now we went with pepper jack cheese. But you can easily use sharp or even a Mexican shredded cheese for topping.
Swaps And Variations
- Use Mexican cheese instead of pepper jack cheese.
- Leave out the Rotel, or swap with diced tomatoes.
- Add in some cooked Chorizo, sausage or even ground beef for added heartiness.
- You don’t have to top the dip with green onions, but we loved the flavor.
- Make a loaded Texas Trash and top your finished dip with sliced tomatoes, black olives, avocado, and even more sour cream.
Helpful Tools For The Recipe
Baking Dish – Or opt for aluminum foil throw away style pans. This is great for tailgating to toss on the grill for game day entertaining. Or in the oven and take to a potluck.
Mixer – You can use a hand mixer or just mix up with a wooden spoon like I did. I was fine to see little clumps of cream cheese and sour cream when we dipped in the finished product.
How to Make
Step 1: Start by greasing pan and preheating the oven as directed. I used a deep dish pie pan, but you can also use an 8×8 size pan if you prefer.
Step 2: In a bowl you are going to add in your refried beans, Rotel, cream cheese, taco seasoning, sour cream and mix well. Make sure the cream cheese is softened for easy mixing.
Step 3: You will then pour into a baking dish, and top with shredded pepper jack cheese. Or any cheese of your choice.
Step 4: Bake as directed in recipe card, and then serve with any of your favorite dipping items.

- Crisp veggies – Carrots, Celery Sticks, Mini Peppers, Cucumber slices, etc.

- Etc.
Expert Tips
- Place cream cheese in the aluminum package in warm water (not hot for 3-5 minutes. This will soften the cream cheese quickly.
- Drain the liquid off the Rotel before mixing in the bean dip.
- Greek plain yogurt can be used as a swap to the sour cream in the recipe.
- Prep the dip and keep covered in the fridge until you are ready to heat up. Then add an extra 5-10 minutes to the cook time to ensure the dip is fully melted and creamy. This is a great make ahead dip recipe.

Ingredients
- 1 can refried beans 16 ounce can
- 2 tablespoons taco seasoning
- 8 ounces cream cheese softened
- 2 cups pepper jack cheese grated
- 1/3 cup sour cream
- 1 can Rotel 10 ounces

Instructions
- Preheat the oven to 350 degrees. Then grease a deep dish pie pan or 8×8 pan.
