Ingredients
Ground Beef – You are welcome to use ground pork, chicken, or even turkey. Or use cooked diced chicken or shredded.
Onion – Yellow or white onion will work best for this recipe. Finely dice the onion.
Taco Seasoning – Any brand you like or make homemade taco seasoning.
Doritos – Classic nacho cheese are what I used for this recipe. You will crush tortilla chips for the bottom and top of the casserole.
Sour Cream – The sour cream adds a nice creamy texture to the dish.
Refried Beans – This is an extra item you can add into the dish. We loved the refried beans mixed in with the meat mixture. It added a lot of flavor to the dish.
Shredded Cheese – I used a Mexican cheese blend but any of your favorite cheese blends works.
Rotel – Rotel is diced tomatoes and green chiles. You will want to make sure to not drain the can, as the liquid helps keep the filling moist, vs. dry.

- Use a different flavor of Doritos – like cool ranch or even taco flavored.
- Leave out refried beans.
- Mix in drained corn or black beans.
- Use diced tomatoes if you don’t have or like green chilis.
- Replace Rotel with salsa if you would like.

Storage
In the Fridge: Doritos casserole will store 3-4 days in an airtight container. Reheat leftovers in the microwave or oven wrapped in foil.
In the Freezer: Or you can freeze leftovers. The top chips will change in texture once froze and thawed. You can freeze the casserole 2-3 months. Then that in the fridge overnight.
Pro Tips
- Drain off any excess grease from the ground beef before you add in the other ingredients.
- If you do not want to eat some soggy chips, skip the bottom layer. We like the bottom layer as it offers tons of flavor to the casserole.
- The meat mixture is wet, but we prefer a creamier casserole instead of dried out.
- You can use hot or medium seasoning to add some spice, same for the Rotel.
