Dorito Casserole

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 can refried beans 16 ounce
  • 1 can Rotel 14.5 ounce
  • 1/2 small onion
  • 15 ounce bag Doritos Nacho Cheese
  • 1 cup sour cream
  • 3 cups shredded cheese Mexican blend

Instructions

  • Preheat the oven to 350 degrees, and grease a 9x13 pan.
  • In a skillet add your ground beef and diced onion. Cook on medium-high heat until fully cooked.
  • Next you will add in the taco seasoning plus water. Mix well to ensure all the meat is coated well.
  • Stir in the refried beans mixing well.
  • Turn heat off and pour in the Rotel, sour cream, and mix well. Once well mixed set aside.
  • In your casserole pan you will add around a cup of Doritos, and crush them slightly. Then add a thin layer of shredded cheese.
  • Pour your meat mixture on top of the Doritos.
  • Top with the rest of the cheese, and crush 2-3 cups of Doritos on top. I just break them a little bit, don't over-crush or they will sog up.
  • Bake in the oven for 5-10 minutes or until warmed through.
  • Once the Dorito casserole is done, remove and serve with extra sour cream, lettuce, tomatoes or other toppings.

Notes

Ground Beef - You can swap the ground beef with ground turkey, pork, or even used cooked chicken. Shredded or diced.
Drain Grease - Drain off excess grease from your meat before you add in the taco seasoning.
Mix-ins - Swap the refried beans with washed and rinsed black beans. Or add in a can of drained corn.
Spice - You can use a hot taco seasoning and hot Rotel if you want extra spice.
