Mouth watering and delicious tender slow cooker pulled pork is one of my favorite ways to cook up a pork roast. Give this slow cooker recipe a try for an easy weeknight or weekend dinner for the whole family.
Serve your pulled pork on a tender bun, over tortilla chips for pulled pork nachos, bed of rice, etc. It takes just 5-10 minutes of prep to get your pulled bork cooking in your slow cooker. Come home to a satisfying dinner for the whole family.

Ingredients You Will Need
Pork – Pork shoulder roast, pork butt roast, Boston butt roast, etc.
Blackening Seasoning – Any brand works.
Apple Cider Vinegar – Acidic component to tenderize and balance flavor.
Chipotle Pepper Sauce – Spicy flavoring, you can skip if you prefer less spice. Chipotle Adobe sauce is what I used.
BBQ Sauce – Reach for your favorite brand of barbecue sauce.
Onion – White or yellow onion thinly sliced.

Step 1: Season Pork Roast
Take your pork roast and you will place on a cutting board. You will then sprinkle with the blackened seasoning on all sides of the Boston butt roast.
Step 2: Brush Roast With Vinegar Mix
In a small bowl add the Chipotle Adobe sauce and the apple cider vinegar. Mix well and then you will baste this over the whole pork roast.
Step 3: Slow Cook
Place your roast in the slow cooker, and add in the sliced onions. Cook on low for 6-8 hours on low. You will want to make sure the pork reaches 185-195 degrees internal temperature.
Step 4: Rest and Pull Pork
Allow your pork to rest for 20 minutes on cutting board. Then you will pull the pork to shred it. Then stir in the bbq sauce.
Serve as you would wish.
Recipe Notes:
- Add some of the juice from the pork roast to help add a bit more juicy flavor to the roast.
- You can use two forks to pull the meat apart, or meat claws. Remove any fat pieces from the meat.
- You can season the pork roast as you would like, if you don’t want to use a blackening dry rub.
- Low and slow is a must as it can dry out the pork and make it tough.
- If you want your pork to have crispy edges place on a baking sheet and broil for 3-5 minutes. Make sure to add a little liquid or it will dry the meat out.
Ways to Serve Up This BBQ Pork
Pulled pork recipe in the slow cooker is delicious but also versatile. Here are some ways you can serve up this pulled pork!
- Serve on a bun with sliced onions
- Add coleslaw on top of the sandwich
- Make sheet pan nachos with the pork
- Make into Carnitas, stuff for tacos or burritos
- Pulled pork rice bowl
- Etc.
I love to have a pulled pork sandwich with a side of cucumbers and onions, the flavors just compliment each other.
Storing Leftovers
Refrigerate any leftovers you don’t eat right away. You will store your pulled pork in the fridge in the airtight container for 2-3 days. Then you can reheat in the microwave or even in the oven.
Freezing is another option if you want. Just place in a freezer bag or freezer container. Then freeze for 3-4 months. Thaw in the fridge overnight and then reheat as you would like.

Slow Cooker Pulled Pork
Ingredients
- 1 2-3 pound Boneless Boston Butt Roast
- 1 tablespoon Blackening Seasoning
- 2 tablespoons Apple Cider Vinegar
- 2 tablespoons Chipotle with Adobe Sauce just use the sauce
- 2 cups Barbecue Sauce
- 1 small white onion thinly sliced
Instructions
- Take your pork roast and rub the Blackened seasoning all over the roast on all sides.
- Then in a small bowl add your Chipotle sauce and apple cider vinegar. Mix well and then baste your boneless pork roast with the sauce.
- Place your onions in the bottom of the slow cooker, and place roast on top. Place the lid on and slow cook for 6-8 hours or until the pork reaches an internal temperature of 185-195 degrees F.
- Once the pork is done, remove and let the pork rest on a cutting board for 20-30 minutes.
- Then you will use two forks to shred the pork, or use meat claws. Remove any fat from the pork.
- Drizzle with the barbecue sauce, and mix and then serve it up.
- I placed the barbecue pulled pork on a roll with sliced onions and pickles. But you can serve up any way you would like.
