Mexican shrimp guacamole bites are perfectly salted tortilla chips topped with guacamole, seasoned shrimp, and crumbles of Queso Fresco cheese. These little bite size shrimp appetizers will hit the spot.

This shrimp appetizer is a cinch to make, and will really wow your guests. You can opt for store-bought guacamole or whip up a homemade version that you know and love.  

You have that Mexican spiced seasoning on the shrimp that really locks in flavor, then toss it on a salty tortilla chip with a dollop of guacamole, and then topped with cheese, is like paradise.

Each bite you get that savory and spiced up flavor, that will leave you reaching for one more chip! Nothing beats a shrimp appetizer in my books, and this one is top of the list.

Can You Make Mexican Shrimp Guacamole Bites Ahead of Time

You do not want to make these too far in advance, as it will begin to make the chips soggy. You can mix up your guacamole and place on chips. I would only do this portion around 2 hours before serving. You don’t want your chips to get soggy. Then before you are ready to serve, cook shrimp and then assemble.

What Is The Fastest Way to Clean Shrimp 

Buy shrimp that hasn’t been cleaned? Here is the fastest way I have found to clean shrimp. 

  1. Pull off the head and outer shell. 
  2. Devein using a skewer or knife. Run the skewer down the back of the shrimp. 
  3. Sprinkle with corn starch and stir around over the shrimp. 
  4. Rinse in cold water. 

You might be thinking why use corn starch.  Well, cornstarch sticks to the shrimp and helps to pull away any yuck that is still stuck on your shrimp. Once you wash in cold water, you will be amazed at how dirty the water turns. It does a really good job, better than what just cold water can do. 

If you don’t have corn starch you can always reach for a potato starch. Neither will affect the taste of your shrimp. It just ends up getting your shrimp a lot cleaner. 

How Do You Know If Shrimp Is Undercooked 

When cooking shrimp you want to ensure the exterior of the shrimp is pink and the tails offer a red color. Look at the flesh of the shrimp to see if they offer a “white” color.  It is hard because cooking shrimp you can go from done to overcooked in seconds. 

Ingredients for Mexican Shrimp Guacamole Bites

  • Batch of guacamole
  • 3 lbs of shrimp
  • 1 10 oz pack of queso Fresco (white Mexican crumbling cheese)
  • 1 bag of  round tortilla chips
  • 2 tbsp chilli powder
  • 2 tbsp cumin
  • 1 tbsp salt
  • ½ tbsp butter

  1. Heat skillet up to med-high and add ½ tbsp butter.
  2. Place shrimp in the skillet and allow them to cook 2-4 minutes per side.
  3. Add chili powder, cumin, and salt to the shrimp.
  4. Remove the shrimp and let them cool down.
  5. Open the chips and remove the flat ones.
  6. Use a spoon to spread the guacamole evenly over the chip.
  7. Add the shrimp on top of the chip.
  8. Next, add a bit of the queso Fresco cheese to each chip.
  9. Garnish with cilantro or parsley and serve!

Is it Healthy To Eat Shrimp 

Shrimp do contain a good amount of cholesterol. But the one positive to shrimp is they are loaded with nutrients and low in calories. You will find you get a great source of omega-3 fatty acids, vitamin D and B, and more. Depending on how you prepare the shrimp also plays a roll. 

If you soak your shrimp in butter then you are adding more fat to your dish. It is all about moderation!
