You do not want to make these too far in advance, as it will begin to make the chips soggy. You can mix up your guacamole and place on chips. I would only do this portion around 2 hours before serving. You don’t want your chips to get soggy. Then before you are ready to serve, cook shrimp and then assemble.

What Is The Fastest Way to Clean Shrimp
Buy shrimp that hasn’t been cleaned? Here is the fastest way I have found to clean shrimp.
- Pull off the head and outer shell.
- Devein using a skewer or knife. Run the skewer down the back of the shrimp.
- Sprinkle with corn starch and stir around over the shrimp.
- Rinse in cold water.
You might be thinking why use corn starch. Well, cornstarch sticks to the shrimp and helps to pull away any yuck that is still stuck on your shrimp. Once you wash in cold water, you will be amazed at how dirty the water turns. It does a really good job, better than what just cold water can do.
If you don’t have corn starch you can always reach for a potato starch. Neither will affect the taste of your shrimp. It just ends up getting your shrimp a lot cleaner.
How Do You Know If Shrimp Is Undercooked
When cooking shrimp you want to ensure the exterior of the shrimp is pink and the tails offer a red color. Look at the flesh of the shrimp to see if they offer a “white” color. It is hard because cooking shrimp you can go from done to overcooked in seconds.

- Batch of guacamole
- 3 lbs of shrimp
- 1 10 oz pack of queso Fresco (white Mexican crumbling cheese)
- 1 bag of round tortilla chips
- 2 tbsp chilli powder
- 2 tbsp cumin
- 1 tbsp salt
- ½ tbsp butter
Directions for Mexican Shrimp Guacamole Bites
- Heat skillet up to med-high and add ½ tbsp butter.
- Place shrimp in the skillet and allow them to cook 2-4 minutes per side.
- Add chili powder, cumin, and salt to the shrimp.
- Remove the shrimp and let them cool down.
- Open the chips and remove the flat ones.
- Use a spoon to spread the guacamole evenly over the chip.
- Add the shrimp on top of the chip.
- Next, add a bit of the queso Fresco cheese to each chip.
- Garnish with cilantro or parsley and serve!
