Chicken salad bites are the perfect bite-size appetizer that is a creamy chicken salad, served in a crunchy phyllo cup. Chicken salad appetizers are great to serve up this summer during your cookouts, entertaining and more. Or make these to sit back in the comfort of your home rooting for your favorite sports team.

Chicken salad cups are one of my go-to quick 15 min appetizers to serve up to guests. It is a lot quicker than 15 minutes if you already have pre-cooked chicken. If you don’t, it takes time to cook the chicken first. This chicken salad cups appetizer is popular, easy, and quick to prepare, it will leave your guests feeling satisfied!

I buy the pre-ready phyllo shells, so I just pull from the freezer, let thaw as I am prepping the chicken salad, and then fill up the cups and serve. Easy peasy!

If you want to use canned chicken in chicken salad bites, you are welcome to. I just cook up some boneless chicken and shred or use leftover rotisserie chicken I picked up from the store. But, feel free to reach for the can if you like the flavor of the canned chicken. 

When I have been in a hurry, I have reached in the pantry for the canned chicken to use! It isn’t my favorite but it does work if you have some unexpected guests coming and you want to whip up some bite-size appetizers. 

What Can I Use To Replace Mayonnaise in Chicken Salad Bites 

If you want a lighter version reach for Greek plain yogurt or you could use a mix of Greek yogurt and sour cream. Stir together and then pair with the spice and peppers. The Greek yogurt would give you some protein and vitamins to the mixture. 

How To Make Chicken Salad Cups

Start by tossing your cooked and shredded or diced chicken into a bowl. Add in your pepperoncini, mayo, and Mrs. Dash and give a good stir. Then grab your phyllo shells and fill them up!

If you want to make this chicken salad appetizer ahead of time, simply make the salad portion and place in the fridge wrapped up. Then right before serving, grab phyllo shells and fill them up to serve. 

If you allow your chicken to sit in the cups for too long, your phyllo can become a bit soggy, and it won’t taste as good when you go to serving it.

Easy chicken salad bites that are the perfect bite-size appetizer for entertaining. Cold chicken salad stuffed into phyllo cups.


  • 2 Cups shredded or chopped chicken (you can use canned chicken)
  • 1/3 cup pepperoncini
  • ¼ cup mayonnaise
  • 1 tbsp Mrs. Dash table blend
  • 1 package phyllo shells


  1. Add your diced or chopped chicken to a bowl with all the ingredients except the phyllo.
  2. Give it a good stir then spoon the chicken salad into the phyllo cups.
  3. Serve and enjoy.
