Ingredients Needed
Egg Whites – It is important to make sure none of the yolk gets in the egg whites. It will cause the meringue to not form up as firm.
Cream of Tartar – A must when making meringue. This simple ingredients will give you that pillow-y and fluffy texture.
Vanilla or Peppermint Extract – You can use vanilla extract or peppermint extract to flavor the meringue. You can use other flavors but these are my two favorites.
Powdered Sugar – I use powdered sugar as a topping for the snowmen with decoration.
Gel Food Coloring – I used purple gel food coloring but you can use any colors you would like.
Sprinkles – Christmas sprinkles are optional, but they can elevate the look. I used the sprinkles to decorate the snowmen, but you could add icing to the meringues.
How to Make
The full recipe with measurements is in the printable recipe card featured at the bottom of the post.
Step One: Preheat Oven And Prep Pan
Preheat the oven to 160 degrees F. Then you will line your cookie sheet with a parchment paper or silicone baking mat.
Step Two: Beat Egg Whites
With a stand mixer or hand mixer you will add the whisk attachment. Beat your egg whites with the cream of tartar for 30 seconds until it is a foamy texture.
Step Three: Add in Sugar
Next you will add in the sugar, doing half the sugar and then add in the rest after it mixes for a bit. You will then continue to beat until stiff peaks form.
Step Four: Purple Meringue for Decorating
Now with the purple meringue pipe on a scarf and earmuffs on the top circle. Then dust with powdered sugar.
Step Five: Piping Meringue
Pour the meringue into a piping bag with a round tip. Save back some of the meringue and add the food coloring to, to decorate the snowman.
Put two circles together so they touch each other. One circle needs to be a bit bigger. Then add on sprinkles to add eyes, nose, and buttons on belly.
Step Six: Bake
Add the snowmen meringues into the oven and bake as directed, then allow drying time.
Variations and Tips For Success
- For white meringue make sure to use a clear food coloring, or it will change the color of the meringue.
- Any flavor of extract works, almond extract, orange, etc. if you want a fruity or different flavor.
- I used large baking sheets as the meringues are a good size when placed together.
- A large round tip works great for piping.
- Make sure you have a preheated oven for this recipe.
- Start on medium speed and you can work up to full speed when working on the stiff glossy peaks.
- You can use melted white chocolate that is colored to pipe on a chocolate smile, eyes, and such. Or do sprinkles like I did.
- Do any shape of meringue you would like. Christmas trees, gingerbread men, etc.
- The head of the snowman will be the smaller circle.
Storing
Room Temperature: You can store your meringue treats in an airtight container at room temperature for up to two weeks.
Freezing: Go ahead and freeze any cookies you do not eat right away. They will store for up to three months in a freezer bag or airtight container. Thaw at room temperature when you are ready to eat.
