Instant Pot Barbacoa Beef Tacos
We shop at Dillons (Kroger Affiliate) and so many times you can find deals on the roast, generally buy 1 get 1 free. I love when this deal takes place as we buy a couple roast and then freeze them. It really helps cut down our grocery cost, and we are able to really stretch out meals. There are just three of us in our family and these Barbacoa beef tacos really hit the spot and we have a good amount leftover. Then we re-heat and serve the next day and it tastes just as good.
Sometimes I switch it up and I serve with some salty tortilla chips to create a nacho style dinner or make rice if we ate them on tortillas the night before. I find changing up how we eat them the next day really helps us to not feel like we are eating the same thing over and over again! Leftovers are not always fun but if you change it up a bit, you will be amazed that they taste a bit better the next day!
Tasty Instant Pot Shredded Beef Tacos
Now if you do not have a chuck roast you are welcome to use another type of roast. I find a chuck roast is an affordable option but also they have good marbling which helps give a nice flavor and a tender finish.
If you want to tame the heat only add 1 chipotle pepper or skip the actual peppers and just add a tsp of the sauce. This will help reduce the amount of heat these tacos pack.
- 3lb beef tender chuck roast
- 2 key limes; sliced
- 1 bundled of cilantro; chopped
- 1 tablespoon cumin
- 2 cups beef broth
- 1 large onion; sliced into rounds
- 2 tablespoons garlic; minced
- 1 large red onion; diced
- 3 chipotle peppers in adobo sauce
- 2 packages of tortillas
- 1 teaspoon pepper
- 1 teaspoon salt
In the instant pot or pressure cooker, add in beef, beef broth, and onion. Put half the bundle of chopped cilantro. Add in chipotle peppers, garlic, cumin, salt, and pepper.
Set pot to high pressure mode. Set time to 1 hour. Let natural pressure release on its own.
Serve on tortillas with fresh key lime, cilantro, red onion and any your choice of cheese.
