I am somewhat new to the Instant Pot game, I didn’t hop on board when it first came out. I had heard mixed reviews and to be honest I didn’t know if it was worth investing. But, after seeing many people simplify dinner time with quick and easy dinners I had to give it a try. So I bought a 6qt and let me tell you, I should have purchased it sooner! I am now on the Instant Pot party wagon, and loving every single minute of it.

What I love about this cheesy one pot taco recipe is you could it all in your Instant Pot. Ground up the beef and cook it, then toss in your other ingredients and let the Instant Pot handle the rest. When you release and open it up, you have tender pasta that is infused with your Tex-Mex flavors, and then top with your favorite taco toppings.

Tasty One Pot Cheesy Taco Pasta

Serve with some crusty bread or a crisp green salad and you have dinner ready for your entire family. You can make this in under 30 minutes and is great for a busy mom who doesn’t want to spend time in the kitchen for a long period of time. Or if you are new to the Instant Pot this is a really easy recipe to try out. It allows you to see how to cook pasta, with minimal steps required.

This ground beef chopper is a very affordable tool that I use in my Instant Pot or even stove. This tool works great at breaking down the ground beef and getting it all cooked thoroughly. My mother-in-law bought me one year ago and I still use it to this day. It has lasted me years and I didn’t think I would use it as much as I do. So if you like fun kitchen gadgets and gizmos this is one kitchen tool I recommend.

How To Make Taco Pasta In The Instant Pot

  • 1 lb ground beef
  • 1 packet taco seasoning (or two tbs homemade)
  • 3 Cups chicken broth 
  • 1 cup salsa 
  • 8 ounces uncooked pasta shells
  • 1 1/2 cups shredded Mexican Cheese
  • Toppings: tomatoes, cheese, sour cream, avocado, cilantro, etc.

The first step is you want to turn the Instant Pot on to the saute mode and cook the ground beef until brown. Drain off any grease.

Then, toss in all the ingredients (except for toppings) and close lid, and cook on manual high pressure for 5 minutes. Do a quick release when done.

Top with your favorite toppings and dinner is served.

Instant Pot Cheesy Taco Pasta

Yield: 8 people
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Transform your taco Tuesday with this Instant Pot Cheesy Taco Pasta! Tender pasta, Tex-Mex taco flavors, and topped with your favorite taco toppings. 

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning (or two tbs homemade)
  • 3 Cups chicken broth 
  • 1 cup salsa 
  • 8 ounces uncooked pasta shells
  • 1 1/2 cups shredded Mexican Cheese
  • Toppings: tomatoes, cheese, sour cream, avocado, cilantro, etc.

Instructions

  1. Turn the Instant Pot on to saute mode and brown the ground beef. Drain grease.
  2. Toss in all other ingredients except for the toppings. 
  3. Close the lid to and turn to sealing. Set manual high pressure for 5 minutes, and then do a quick release. 
  4. Serve and top with your favorite ingredients. 

Notes

FREEZER MEAL INSTRUCTIONS


1. Add in cooked ground beef to a freezer bag, Add in taco seasoning, salsa, and freeze for up to three months.

TO COOK FROM FROZEN:

1. Add in pasta in bottom of the instant pot. Add in 3 cups of chicken stock, make sure to cover all pasta. Add in frozen meat mixture.

2. Cook on high pressure sealed for 4 minutes with a quick release.

3. Stir in cheese and then add your favorite toppings to each plate.

Tried this last night. Flavor was great. But the bottom burned resulting in the instant pot never coming to pressure... not sure what i did wrong. Ended up turning it to Sauté mode to let the noodles finished cooking. Taste was great, just wish I knew why it burned.

One big thing is after you cook the ground beef and such, make sure to scrape bottom of pot to ensure nothing is stuck. If so it can cause a burn notice and burn your bottom of pot.

How would I adjust the cook time if I froze in half for two servings instead of four ?

If you are doing from froze for just 2 servings I would only do 2-3 minutes on High pressure.
