TikTok did it again with another Tiktok viral recipe that took the world by storm. Corn ribs are a delicious and new way to serve up corn on the cob. Sliced into wedges and grilled, or even air fried to a perfect texture. I seasoned my corn rib recipe with street corn flavors, and topped it off with crumbled Cojita for the finishing touch.
If you need a summer side dish, this TikTok recipe for grilled corn ribs might be a huge hit. There are so many ways to adjust the flavor for a tasty corn dish.

Grill Or Air Fry – You can grill this corn or air fry it! Both methods work, I share the directions for both in the recipe card.
Variations To Seasoning Corn – You can season your corn in so many ways, I did the street corn, but you could do simple butter and salt and pepper. Garlic and butter, or any other flavors!
Affordable – This is a very affordable recipe to make. Great for summer cookouts, to serve up the family, and more.
Ingredients You Need To Make
Corn on the Cob – I love using sweet corn on the cob! Make sure to pick fresh corn.
Bloody Mary Mix – I love the tangy flavor this gives the corn. In a pinch you can use Clamato juice or even tomato juice.
Chili Lime Seasoning – This adds a nice tangy flavor to your corn ribs. It is going to really bring out a ton of flavor.
Mayonnaise and Sour Cream – These two are the creamy base to the street corn topping.
Lime Juice – I recommend freshly squeezed lime juice vs. bottled, but you can use what you prefer.
Cotija cheese – This adds tons of tangy and creamy flavor. Feta can be used as a replacement.
Cilantro – optional
How to Make
Step 1: Turn on your grill and heat to around 400-450 degrees. If you are using your air fryer you can preheat the air fryer to 375 degrees. I used my Green Mountain Grill for this recipe. Then you will quarter your corn, cut in half, then cut the halves in half again. This makes the ribs.
Step 2: Pour the bloody mary juice in and the chili lime seasoning, and coat the corn ribs evenly. Flip the corn around to make sure all sides of the corn are coated.
Step 3: Toss your corn on the hot grill, or in your preheated air fryer. Cook for 5-8 minutes, then flip. You want to char the corn and watch the corn begin to curl, like a rib would. That is when you will pull them off the grill.
Step 4: While your corn is cooking you can work on the creamy sauce. Mix up the sour cream, mayo, and lime juice.
Step 5: Once the corn is done, remove from grill. Drizzle with the cream sauce, sprinkle on Cotija cheese, and cilantro!
How To Eat
Not sure how to eat this corn on the cob recipe? All you do is hold the ends like you would a regular corn on the cob, and eat away the kernels. You will find that the cob is still in tact so eat around it.
Storage
This rib corn Tiktok recipe is best eaten fresh and hot off the grill. If you happen to have leftovers toss in the fridge and eat later. It will store for 1-2 days in the fridge.
Eat it cold leftover or opt to warm it up. If you are going to warm it up, I recommend leaving off the mayo based sauce and cheese.
Expert Tips
- Depending on how large or small your corn slices are the cook time will vary. Same goes for the temp of your grill.
- I have made these in my Ninja Foodi Grill, Air Fryer, and pellet grill! They all work great, and turn out awesome.
- The air fryer corn ribs will cook faster than on the grill, so reduce cook time a bit.
- This grilled side dish is great with steak, chicken, or even pork or fish.
- The corn is done when it begins to curl in.
Variations To Recipe
Not sure how to make corn ribs differently? Here are a few ideas for you to consider.
- Brush corn with some oil and then do a dry bbq rub on the corn.
- If you enjoy spice brush corn with some Franks buffalo hot sauce and grill it up.
- Lightly brush with bbq sauce, then grill.
- Do a simple salt and pepper mixture, and a light brush of oil.
- Etc.

Shuck your corn removing all the husks and the silk. Then you will carefully slice your corn in half. Then from there place the flat side down, and slice again in half. This will make the corn into quarters.
You will only eat the kernels off the corn rib. Then just discard the cob.
The corn cob core can’t be eaten as it is mature and a larger corn cob. Baby corn has softer cobs and can be consumed.

Corn Ribs Recipe
Ingredients
- 4 Corn Cobs 0r more
- 1 cup Bloody Mary Mix or Tomato Juice
- 3 Tablespoons Chili Lime Seasoning
- 2 Tablespoons Lime Juice
- 1/3 cup Mayonnaise
- 1/3 cup Sour Cream
- 1/2 cup Cojita Cheese optional
- Chopped Cilantro optional
Instructions
- Preheat your grill to 400-425 degrees. Then you will slice your corn cobs in half, and then in half again. Each corn cob will be cut into 4.
- Place your sliced corn ribs in a container and pour in the bloody mary mix, and then the chili lime seasoning. Mix well to ensure the corn cobs are coated on all sides. Let it soak for 5 minutes.
- Place your corn on the grill, and cook for 5-8 minutes and then flip. You want to char the corn a bit, and the corn is done when the cobs begin to curl in a little, like a rib.
- While the corn is cooking mix up your sour cream, mayonnaise, and lime juice in a bowl.
- Once corn is done, carefully remove. Drizzle with the creamy sauce, and crumbled Cotija cheese, and cilantro.
- Serve your corn ribs warm with your favorite main dish!
