Sage, thyme, garlic, and more all in one delicious pork breakfast sausage. This homemade breakfast sausage recipe uses simple ingredients and offers a big flavor that the whole family will enjoy.
When you make your own sausage you control the ingredients used. Plus you can make a mild or spicy sausage to fit your preference. I did add a little maple syrup for a sweet and savory sausage, but that is optional.

How to Make
Full steps on how to make breakfast sausage is in the printable recipe card. This is a visual walk through on how to make sausage from scratch.
Step One: Start by using a medium bowl and add in the ground pork, and diced up raw bacon.
Step Two: Season with the sage, thyme, garlic powder, nutmeg and salt and pepper. Use your hands to mix to combine the ingredients.
Step Three: Then you will add in maple syrup if you want to have a maple sausage. If you don’t want a sweet sausage, leave the syrup out.
Step Four: Add oil in a skillet and heat on medium heat.
Step Five: Cook the sausage patties for about 3-4 minutes per side. You want the sausage to fully cook and become golden brown on the outsides.
Variations to Breakfast Sausage
- Spice it up with some red pepper flakes or cayenne pepper to create a spicy sausage.
- Swap maple syrup with brown sugar to sweeten up the homemade sausage.
- You could use a white pepper instead of black pepper.
- Change up the seasonings you use to flavor your sausage if you would like. Just mix into the sausage mixture as you would then shape into patties and cook.
Storing Sausage
Here are some tips for storing your breakfast sausage patties! You can freeze them as raw breakfast patties or freeze cooked patties.
Refrigerate – You will want to refrigerate any of the sausage you do not eat right away. Just place in an airtight container and store for up to three days in the fridge.
Then you can reheat in the microwave or in a skillet. If you heat up in a skillet add a little bit of water to prevent the sausage from drying out.
Freezing – You can freeze your patties raw or cooked. Place your cooked patties on a lined baking sheet and freeze for 1 hour. Once the patties are frozen you can place in a freezer friendly container or bag.
For raw patties, I like to use wax paper between each layer of sausage patties. This will prevent the patties from sticking together.
Then freeze for 3-5 months. Thaw the raw sausage patties in the fridge overnight, then cook. You can heat the reheat patties straight from being frozen if you would like.

Homemade Breakfast Sausage
Ingredients
- 1 1/2 pounds ground pork
- 3-4 strips bacon diced
- 1 teaspoon thyme
- 1 teaspoon sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon nutmeg optional
- 2 tablespoons maple syrup optional
- 1-2 tablespoons oil
Instructions
- In a medium bowl you will add your pork and diced bacon. Mix to combine.
- Next you will add in the sage, thyme, garlic powder, salt, pepper, nutmeg and then add in the maple syrup if you want.
- Mix well with your hands and form into patties. I made 12 sausage patties.
- Add oil into a skillet and heat on medium heat. Once hot add your sausage into the pan and cook in batches.
- Brown the sausage on the outside and ensure the internal temperature is 145 degrees F to ensure the pork is fully cooked.
- Repeat cooking patties until they are all cooked. Serve and enjoy.
