Turtle cookies are a chocolate cookie that is rolled in pecans, topped with caramel and semi-sweet chocolate. A rich and decadent pecan turtle cookie! This copycat Crumbl recipe is one to try out.
Have you had a Crumbl cookie? If so, you know they are such a popular brand right now that is swooning the world with one cookie at a time. I personally have not gotten to try these decadent cookies, but I wanted to create a turtle cookie recipe that is inspired by their cookie creation.

Ingredients You Will Need
Flour – All purpose flour. Make sure to measure your flour by scooping into the right size measuring spoon and leveling it off.
Granulated Sugar and Brown Sugar
Pecans – Crushed or finely chopped.
Cocoa Powder – You can use a classic cocoa or a dark chocolate cocoa if you would like.
Caramel Sauce – Make homemade or buy your favorite brand of caramel sauce.
Semi-Sweet Chocolate – Use a chocolate baking bar or chocolate chips, either work great.
Baking Soda
Vanilla
Eggs – Room temperature
Salt

How to Make
Full directions on how to make these Crumbl copycat cookies are in the printable recipe card below. This is a visual walk through on how to make.
Step One: Start by preheating the oven as directed and prep your cookie sheets. If you have caramel sauce put in the fridge to chill. You want it cold.
Step Two: Now in a stand mixer cream your butter with granulated and brown sugar. This will take 5-6 minutes on medium speed. It will change in color and become fluffy.
Step Three: Now you will add in your eggs and vanilla. Mix and scrape down the sides if needed.
Step Four: Sift your flour, cocoa powder and the salt and baking soda. This will remove any clumps, which is needed.
Step Five: Slowly add the flour mixture into the wet, on low speed. Don’t overmix the cookie batter.
Step Six: Now you will use an ice cream scoop and create 14 equal cookie dough balls.
Step Seven: Roll the chocolate cookie dough in the chopped pecans and place on baking sheet. Press the balls down.
Step Eight: Bake as directed, and then allow to cool for 10 minutes on the cookie sheet. Then remove and cool on a cooling rack.
Step Nine: Then to assemble add a dollop of caramel on top of cooled cookies, then top with melted chocolate in the center. Add more nuts on top if you would like.
This Crumbl copycat recipe is very similar to the flavor you can get in store. But dare I say these are even better? I find these cookies are a lot more moist from what I have heard, Crumbl cookies can be a bit dry.
Tips For Making Cookies
- Do not skip creaming the butter with the sugar. This is going to really transform the texture and flavor of your cookies.
- Using an ice cream scoop gives you large cookies that are all even in size. If you don’t use a cookie scoop or ice cream scoop you will have uneven baking on cookies.
- The cookies will be soft once you remove from the oven. You want them soft not raw. Then let them sit for 10 minutes on the cookie sheet. This is a crucial step.
- Make sure the caramel sauce is cold, or it will drip off the cookies. Which if it does that is okay, but you kind of want it to stay in the center.
Storing Cookies
Refrigerate – You will find refrigerating the cookies is best, as it keeps the caramel harder, and the chocolate set up on top. Just use wax paper for stacking cookies, or they will stick and make a mess.
Freezing – Feel free to freeze any cookies you don’t plan to eat right away. Just store in a freezer container for 2-3 months. Thaw in the fridge overnight or place on the counter for 30 minutes to an hour.
FAQs
Turtle candy got its name because it looked like a turtle. Turtle cookies have the same ingredients as a turtle candy, so you know you would be eating nuts, chocolate and caramel.
Go right ahead and double the recipe if you want. Just batch cook the cookies. I have multiple cookie pans so it works great to let the first batch rest on the pan and then have the other batch baking.
These cookies are large in size. If you want you can make smaller sized cookies by using a smaller scoop. Just bake the cookies for less time, or they will over bake.

Turtle Cookies
Ingredients
- 1 cup of unsalted butter room temperature
- 2 large eggs room temperature
- 3/4 cup unsweetened cocoa powder
- 1 1/4 cup brown sugar packed
- 1/4 cup granulated sugar
- 1 tablespoon vanilla
- 2 cups all purpose flour scooped and leveled
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup Ghirardelli caramel sauce chilled
- 1/2 cup semi sweet chocolate chips melted
- 1 1/3 cup chopped pecans
Instructions
- Place your bottle of caramel in the fridge to get nice and cold. Then preheat the oven to 350 degrees. Prep your pans by lining with parchment paper or a silicone baking mat.
- Now in a stand mixer you will cream your softened butter, brown sugar and granulated sugar. Beat on medium speed for 5-6 minutes. Make sure to allow it to mix for the whole 6 minutes. It will become light and fluffy.
- Now add in the eggs, and vanilla. Make sure if needed to scrape down the sides of bowl.
- In a small bowl sift your flour, baking soda, salt and cocoa powder.
- Turn the speed to low and add in the dry ingredients a little at a time. Make sure to not overmix the cookie batter.
- With a cookie scoop you will now form 14 equal balls of chocolate cookie dough.
- Roll the cookies in the pecans and place on a baking sheet.
- Press the dough balls down to about an inch thick. Then bake for 13-15 minutes.
- The cookies will be pretty soft, but not raw at this point. Remove cookies and let them sit on the baking sheet for 10 minutes. This will finish cooking the cookies.
- Remove cookies after the 10 minutes and place on the cooling rack for 20-30 minutes.
- Once the cookies are cooled, you will melt the chocolate in the microwave.
- Add a spoonful of the cold caramel and then a spoonful of the chocolate in the center of each cookie. Top with more pecans if you would like.
