Turtle Cookies

Turtle cookies are a chocolate cookie batter rolled in pecans, and then once cooked topped with caramel and a dollop of chocolate. A Crumbl cookie inspired recipe that will take your breath away. Give this chocolate caramel cookie a try.

Ingredients

  • 1 cup of unsalted butter room temperature
  • 2 large eggs room temperature
  • 3/4 cup unsweetened cocoa powder
  • 1 1/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 tablespoon vanilla
  • 2 cups all purpose flour scooped and leveled
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup Ghirardelli caramel sauce chilled
  • 1/2 cup semi sweet chocolate chips melted
  • 1 1/3 cup chopped pecans

Instructions

  • Place your bottle of caramel in the fridge to get nice and cold. Then preheat the oven to 350 degrees. Prep your pans by lining with parchment paper or a silicone baking mat.
  • Now in a stand mixer you will cream your softened butter, brown sugar and granulated sugar. Beat on medium speed for 5-6 minutes. Make sure to allow it to mix for the whole 6 minutes. It will become light and fluffy.
  • Now add in the eggs, and vanilla. Make sure if needed to scrape down the sides of bowl.
  • In a small bowl sift your flour, baking soda, salt and cocoa powder.
  • Turn the speed to low and add in the dry ingredients a little at a time. Make sure to not overmix the cookie batter.
  • With a cookie scoop you will now form 14 equal balls of chocolate cookie dough.
  • Roll the cookies in the pecans and place on a baking sheet.
  • Press the dough balls down to about an inch thick. Then bake for 13-15 minutes.
  • The cookies will be pretty soft, but not raw at this point. Remove cookies and let them sit on the baking sheet for 10 minutes. This will finish cooking the cookies.
  • Remove cookies after the 10 minutes and place on the cooling rack for 20-30 minutes.
  • Once the cookies are cooled, you will melt the chocolate in the microwave.
  • Add a spoonful of the cold caramel and then a spoonful of the chocolate in the center of each cookie. Top with more pecans if you would like.

Notes

Storing - I like to store my cookies in the fridge, as it keeps the chocolate and caramel set. But you can store at room temperature in an airtight container as well.
Freezing - The cookies can be frozen as well. Place wax paper between each stacked layer to prevent cookies from sticking.
Nuts - I used pecans but you are welcome to use any of your favorite chopped nuts.
