Ingredients For Slow Cooker Chicken Tortilla Soup
- 1 package of chicken (I used tenderloins)
- 1 cup milk
- Dash of salt and pepper to taste
- 1 cup chicken stock
- 1 can (4 0z) green diced chilies
- 1 can diced tomatoes
- 2 tbs taco seasoning
- 1/2 tsp garlic powder
- Tortilla chips, sour cream and shredded cheese (optional toppings)
How to Make Slow Cooker Chicken Tortilla Soup 
- First, place your chicken in the bottom of the slow cooker

- Add in your milk, chicken stock, seasoning, tomatoes, chilis, salt and pepper, and stir.
- Turn on low for 6-8 hours or chicken is tender and cooked through. Shred chicken and then serve into bowls.
- Top with whatever condiments you want. We did sour cream, shredded cheese, and tortilla chips.
To make this more Weight Watchers friendly, skip the tortilla chips and just serve as is, or low-fat cheese on top. Garnish with some green onions, for a tasty soup.

How Do I Thicken Chicken Tortilla Soup
If you want more of a creamy consistency, just follow this slurry recipe to add a thickness. Take 2 tablespoons of cornstarch to 1/2 cup of cold water. Stir and then about 30 minutes before serving soup pour it into the slow cooker and stir around. The hot soup will help counteract the cornstarch and cold water and thicken the soup.
If you want to add in cheese while it cooks, I recommend Velveeta cheese. If you use shredded cheese during the cooking, it won’t blend well and can be a little clumpy. I have used Velveeta in the past and it works really good. Or just top with cheese like I did here and still enjoy the cheesy goodness.
Where Did Chicken Tortilla Soup Come From
A classic chicken tortilla soup was first created in Mexico City! It was packed with chicken broth, onions, garlic, chiles, roasted tomatoes, and tortillas. They would cut the tortillas and fry them! This was back in 2005. I am so glad they created this soup, because it is one of my favorites!
