Slow Cooker Pepper Steak
I prefer slow cooker pepper steak without tomatoes. I am not a fan of tomatoes, so I like to omit them. But you are always welcome to toss some in when you toss in your peppers if you prefer to have tomatoes in your pepper steak recipe. I also wait until the cooking time is almost up to toss in the bell peppers so they don’t get too mushy during the cooking process.
Now I don’t care for tomatoes so I make pepper steak without stewed tomatoes, but you could easily toss some in for an added flavor. Grab your crock pot and whip up this easy pepper steak. Just prep, cover and cook, then serve over rice or however you prefer.
How Do You Make Pepper Steak Tender
I have found using my crockpot is the best way to get that tender steak I am wanting. I let it cook on low for 6-8 hours and when I come to serve it up for dinner you have juicy, tender, steak! This works with many cuts of meat, it will work at tenderizing it as it cooks over the low heat throughout the day.
How Do You Make Pepper Steak and Onions
I simply slice my steak into thin strips and brown in a little canola oil on a skillet. While that is browning I slice up my onions into thin strips and set aside.
Once my steak is browned, I toss it along with my onions in my slow cooker. Add in the broth, soy sauce, garlic, and ginger and turn on low and let cook for 6-8 hours.
About 30 minutes before I am ready to serve I will slice up my peppers and toss in. Then in a bowl, I add cold water and cornstarch to make a slurry that I stir into the mixture. This will help thicken up the sauce.
Cook up your rice, mashed potatoes if you want to pair your pepper steak with it, and serve and enjoy.

- 1 – 1 1/2 pounds of beef steak (any steak cut works)
- 1 teaspoon oil
- 3 tablespoons cornstarch
- 1 medium yellow onion
- 1 clove garlic minced
- 1/2 cup water
- 2 green bell peppers sliced
- 1 1/2 cups beef broth
- 1/4 teaspoon ground ginger
- 3 tablespoons soy sauce
- salt and pepper to taste
Can I Substitute For Beef Broth
Yes, you can use bouillon cubes or even a vegetable broth. I wouldn’t recommend a chicken stock as it might offer a different flavor when paired with the steak. Or if you prefer a bone broth
, go for it. I am sure it would pair nicely with the beef.
What Cut Of Beef for Crockpot Pepper Steak
For this recipe, you can use pretty much whatever cut of beef that works for you. I have used sirloin, top round steak and more. You could even probably slice up a roast and use some of that. Just remember to always cut the opposite direction of the grain in the meat. It will help to tenderize those tougher cuts of meat.
Cooking low and slow will help tenderize your cut. So you can buy cheaper meat and still have tender steak. Now, I will say you also have to remember the quality of meat will affect the flavor.
Why Do You Sear Steak Before Putting in Crockpot for Pepper Steak
Searing the steak in vegetable oil or even canola oil will help add texture but also add depth of flavor to your steak. If you don’t sear the steak, it will have a lot less flavor. It takes just minutes to stir it around and brown up the sides, so I highly recommend not skipping this step. I heat around medium-high heat to help sear the beef faster.

Crock pot recipes are a lifesaver! I’m looking at going back to work in the fall and need a ton of crock pot recipes to get through. I’m used to being able to cook at my convenience but will have a lot less time for cooking come fall. I will be scouring your website!!
