Lentil Soup
Lentil soup is great any time of the year. Make up a big serving to fill your belly after the end of a long day or work or fill up a mug and snuggle in front of the fireplace during the winter.
I love how filling this simple soup recipe really is. And when I make it, it makes such a big batch that I know I’m going to have leftovers for several days.
To me, that’s a big deal because leftovers are so helpful in meal planning for the week.

You’ll find directions for both an electric pressure cooker and a slow cooker below. It’s up to you how to cook this delicious soup recipe. Or you can try it both ways and see which one you like better!
Instant Pot Lentil Soup
Step 1: Place all ingredients EXCEPT the kale in the electric pressure cooker and stir to combine. (If you are worried about getting a burn warning, place the tomatoes on top after you stir the remaining ingredients together. Then, do not stir in the tomatoes.)
Step 2: Cover and seal the pot. Select “manual” or “pressure cook” for 15 minutes. Allow the pressure to release naturally for 10 minutes prior to a quick release of the remaining pressure.
Step 3: Stir in the kale and allow it to wilt for 1 to 2 minutes.
Step 4: Serve with grated parmesan, if desired.
Slow Cooker Lentil Soup
Step 1: Place all ingredients EXCEPT the kale in the slow cooker and stir to combine.
Step 2: Cover and cook on low for 8 hours.
Step 3: Stir in the kale and allow it to wilt for 1 to 2 minutes.
Step 4: Serve with grated parmesan, if desired.

Do lentils need to be soaked?
They don’t. This is why so many people tend to cook with them. I do recommend rinsing them off though before adding them into your recipe to get rid of any dust and grime.

Since this recipe calls for 2 cups of dry lentils, it’s important to put it into perceptive. 1 cup of dry lentils will cook into about 2 1/2 cups of cooked lentils because they do expand in size once cooked.
How do you cook lentils so they are not mushy?
If you notice that your lentils are mushy, more than likely you’ve overcooked them. While they’re still edible, they will have a mushy texture to them for sure.
To not overcook them just follow the time given on the recipe. If you feel like they’re still overcooked at that point in time, you can scale back and alter the recipe as needed.

Even though this recipe gives you options for a pressure cooker and slow cooker, the pressure cooking method is so much faster. We’re talking at least 7 hours quicker than cooking this lentil soup recipe in the slow cooker.
How do you store leftover lentil soup?
The easiest way to store this soup is to put it in the fridge in a container with a lid. That way you have easy access to it for leftovers and you can easily heat it up to eat over the next few days.
While this soup can be frozen, I really don’t recommend it because I think it alters the texture of the soup too much.
