This is an easy, affordable, and delicious dinner idea. Frito boats or chili pies are one of my family’s favorite. I throw this together during the day, and let it simmer for a savory dinner.
Slow simmer for 5-6 hours and let the seasonings and beans and ground meat all blend together. Then pile on all your favorite toppings for a custom Frito bowl.

Saute | Saute your meat and onions in a skillet on the stove or if you have a slow cooker that offers the saute feature. Then add in your seasoning and stir.
Crockpot | Add all ingredients to the crockpot and allow it to cook for 5-6 hours on low or 3-4 hours on high.
Assemble | Once your done cooking, assemble with Frito chips, lettuce, tomatoes, sour cream, salsa, etc.

🥬What Beans to Use For Frito Pie
I used chili beans that are mild. You can use pinto beans if you want, kidney or other beans that you prefer.
Brooks Chili beans and Bush’s chili beans are our favorite brands. It is one we use for making classic chili or other recipes using chili beans. Feel free to use any style of chili beans you would like.

🧂 Storing Leftovers
If you have extra bean and beef mixture go ahead and place in a storage container. Keep your toppings and salad toppings in a different container or it will sog up the lettuce.
Then just reheat the meat in the microwave or even on the stovetop on low heat.
In terms of freezing you can store leftover chili mixture in the proper container for up to three months. Then thaw in the fridge overnight, or warm in a skillet on the stove on low heat.

Crockpot Cheesy Frito Chili Pie
Ingredients
- 1 – 1 1/2 pounds lean turkey or ground beef
- 1 cup chopped onion
- 2 cans Chili Beans or pinto beans
- 8 oz. can Tomato sauce
- 1 can Original Rotel and juice in the can
- 1 taco seasoning packet
- 1/4 cup water
Toppings
- Corn Chips
- Lettuce
- Shredded Cheese
- Tomatoes
- Salsa
- Etc
Instructions
- In a skillet on the stove brown your ground beef or turkey until no longer pink. Add in your diced onions to soften as well.
- Once meat and onions are tender add in your taco seasoning and water. Stir until the meat soaks in the seasoning mix.
- Now you will add your meat mixture into the slow cooker. Add in the cans of bean, tomato sauce, and Rotel in the slow cooker.
- Cook on low 5-6 hours or high 3-4 hours.
- Once done pour some in a bowl, top with Frito corn chips, shredded cheese, lettuce, etc.
