Corn – You are welcome to use drained canned corn, fresh off the cob, or frozen.

Bell Pepper – I used a green bell pepper. You are welcome to use any color or variety you want.

Mayo – This is the creaminess of the corn dip. 

Taco Seasoning – You can use mild, medium or hot. Or go ahead and make your own DIY taco seasoning

  • 2 cans corn, drained (15 ounces each)
  • 2 cups sharp cheddar cheese
  • 1 tablespoon taco seasoning
  • 1 cup mayonnaise
  • 1/2 small red onion, diced
  • 1 bell pepper, diced
  • 1 bag Frito chips, optional


  1. In a bowl you will add your mayonnaise and your taco seasoning. Mix well to make sure the taco seasoning mixes well with the mayo.
  2. Then dice up a red onion, and bell pepper and toss in the bowl.
  3. Open up 2 cans of corn and drain well, then pour in. You can also use fresh corn off the cob you cut or frozen corn.
