Chickpea salad is a healthy Mediterranean chickpea salad filled with red peppers, chickpeas, feta cheese, cucumbers, and more tossed in a homemade dressing.
A simple cucumber chickpea salad to serve as a side dish or even a main course. I pair this summer chickpea salad with some flatbread for a delicious snack to break up the day. You might even like my bean salad.

Ingredients Needed
Chickpeas – Reach for canned chickpeas drain and rinse in water.
Onion – Red onion is a great flavorful onion to mix in the recipe. You could use white onion.
Tomatoes – Grape tomatoes are what I used but you can swap with any diced tomato.
Kalamata Olives – Reach for pitted whole olives that are brined. It adds incredible flavor.
Roasted Red Peppers – So I opted for roasted red peppers that I diced up. You can swap with a fresh red pepper if you prefer.
Cucumbers – Peel or leave the skin on these English cucumbers. It’s whatever you prefer.
Dressing – Oil, red wine vinegar, lemon are all going to work as the base of the dressing. Tangy and a nice citrus twist.
Seasonings– Dill, salt, pepper, and garlic powder are what I used.
Variations
- Black olives can be used instead of Kalamata. Just dice up olives.
- Use fresh bell pepper in replace of roasted pepper. I used red pepper and it was delicious.
- Leave onions out if you are not a fan of onions.
- Drain, rinse and add in a can of black beans. One can chickpeas and one can black beans.
- Leave out feta or even swap with grated Parmesan cheese.
- Add in some canned artichoke hearts that have been marinated.

Step One: Drain and rinse chickpeas and place in a bowl. Then work on prepping up all the veggies and tossing them in the bowl.
Step Two: Add all the dressing ingredients in a bowl and whisk to combine.
Step Three: Toss vegetables and dressing together and cover and refrigerate until you are ready to serve. Right before top with more feta cheese.
Storing Mediterranean Salad
You can store this garbanzo bean salad in the fridge for up to 4-5 days. Just make sure it is placed in a sealed container.
Then give the garbanzo salad a toss before you dish up to reincorporate the red wine vinegar dressing.
Make Ahead Directions
Go right ahead and make this salad a full day in advance. I just reserve the cheese and toss it in right before serving. That way the cheese doesn’t become too soggy as it sits in the dressing and mixes with veggies.
Store in an airtight container in the fridge!

Mediterranean Chickpea Salad
Ingredients
- 2 cans chickpeas rinsed and drained (15 ounces)
- 1 pint grape or cherry tomatoes diced
- 1/4 cup red onion finely diced
- 1 jar Marinated Kalamata Olives drained (10.6 ounces)
- 6 ounces feta cheese crumbled
- 1 jar Roasted Red Peppers 7 ounces
Dressing
- 1 small lemon juiced
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon dill freshly minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 teaspoon garlic powder
Instructions
- Drain and rinse your chickpeas and place them in a large bowl.
- Then you will drain your olives and dice them up as well, repeat same steps with red peppers by draining and slicing.
- Next you will dice up the tomato, onion, and cucumbers. Pour into the bowl, and add a portion of the feta cheese if you want.
- For the dressing add the oil, vinegar, lemon juice, fresh dill, salt, pepper, and garlic powder into a bowl. Whisk until fully combined and then pour over the salad.
- Toss the chickpea salad well and taste. If you need add more salt to bring out more flavor. You can also add 1/2 tablespoon vinegar to help add more bite to the salad if you want.
- Cover the Mediterranean chickpea salad and refrigerate until you are ready to serve. Right before serving add more feta cheese and enjoy.
