Carrot Cake Sandwich Cookies
Ingredients
- 1 15.25-ounce box carrot cake mix
- ½ cup vegetable oil
- 2 eggs
- 1 container whipped cream cheese frosting
Instructions
- Preheat the oven to 350 degrees, and line cookie sheet with silicone baking mat or parchment paper.
- In a large bowl add your cake mix, oil, and eggs. Mix with a hand mixer, stand mixer, or with a whisk. Mix well till combined.
- Use a cookie scoop and scoop up the cookie dough into balls and place them about 2 inches apart. Lightly press down on the ball and bake for 9-11 minutes.
- Once the cookies are done place on a cooling rack to allow the cookies to cool.
- Then once cookies are done place a layer of cream cheese frosting on the bottom of one cookie. Then sandwich a second cookie on top to make a sandwich cookie.
