This creamy rice pudding is a classic rice pudding recipe. It is one of my favorite Instant Pot recipes I have made thus far. You might also call this an arroz con leche pudding. Either way give this easy dessert a try.

My dad always made rice pudding growing up, it was something I looked forward to. We also ate a lot of rice and raisins for breakfast, which was always a treat.

Ingredients
- White Rice
- Water
- Milk
- Sweetened Condensed Milk
- Vanilla
- Raisins
- Cinnamon
- Salt
How to Make
Step 1: You will start by adding your milk, cold water, cinnamon, salt, rinsed rice, and raisins into the Instant Pot. Stir well, and then close the lid.
Step 2: Turn to porridge setting (which is 20 minutes) and let it cook. Once it is done cooking let it naturally release for 10 minutes.
Step 3: Then release the rest of the pressure, and open the lid.
Step 4: Stir in vanilla and condensed milk and serve, or chill for cold rice pudding.
Ways To Serve

Do You Eat Rice Pudding Hot Or Cold
You can eat rice pudding hot or cold. It is all about your personal preference. We love to pair with a cinnamon stick and some whole milk for thinning it out a bit if you don’t want it as thick.
We tend to eat it warm when it is first cooked, and then toss it in the fridge for later. Then when we spoon it out once chilled, we just eat it cold.

Instant Pot Rice Pudding
Ingredients
- 1 cup white rice rinsed and drained
- 2 cups milk
- 1 1/4 cup water
- 1 teaspoon vanilla
- 1 tablespoon cinnamon or 1 teaspoon if you don't want it too cinnamony
- 1/4 teaspoon salt
- 1 can sweetened condensed milk 14 oz
- 1/2 cup raisins
Instructions
- You will start by adding your milk, water, cinnamon, salt, rinsed rice, and raisins into the Instant Pot liner. Stir the uncooked rice pudding mixture well, and then close the lid.
- Make sure your instant pot is turned to the sealing position on the knob.
- Turn Instant Pot to porridge setting (which is 20 minutes) and let it cook. Once it is done cooking let it naturally release for 10 minutes.
- Then quick release the rest of the pressure, and open the lid.
- Stir in vanilla and condensed milk and serve, or chill for cold rice pudding.
- This rice pudding can be a great dessert or breakfast recipe.

Do you have to use the sweet condensed milk? I’m lactose intolerant and would substitute lactose free milk for the milk.

You could use a lactose milk if you wanted, it would take away some of the creaminess and you would want to probably add some sugar in to help sweeten it up. Then if you needed make a cornstarch slurry at the end to stir in to try and help thicken it. I can’t say it for sure will all be perfect on flavor since the sweetened condensed gives it sweetness, but good luck if you try!

Instead of raisins you can use golden raisins and dried cherries. They have a different flavor. Instead of adding all the sugar, use less then top with pie filling like apple or cherry. When doing this, I prefer to serve hot.

As a child I hated rice pudding. I decided to try this recipe because it had condensed milk in the ingredients. This is good. I will definitely cook it again.

How could I replace the milk to make it diabetic friendly?

For a diabetic version, I would leave out the sweetened condensed and use evaporated milk to replace it. Then reach for an artificial sweetener.

Can I use basmati rice?

I have not tried basmati but I think it should work, it will alter the flavor a bit as it tastes a bit different.

Followed recipe as written. Rice horribly overcooked and the raisins. Gloppy mess and waste of ingredients. Very disappointed.
