How to Make Oatmeal Coconut Chocolate Chip Cookies
- Preheat your oven to 350 degrees. Then in a stand mixer, beat your butter and sugars together until light and fluffy. You want it to really get whipped, this takes around 2-3 minutes.
- Once fluffy add in your egg and vanilla to the mix.
- In a small bowl, add in your oats, flour, baking soda, baking powder, cinnamon, and salt. Stir. Then slowly add in the mixture to the wet ingredients till well combined.
- Turn mixer off, and pour in coconut, and chocolate chips.
- Fold it all in with a spatula, and spoon it onto a greased cookie sheet.
- Bake for 8-10 minutes or until cooked and lightly golden brown. They will be soft, so let them sit on cookie sheet for about 2 to 3 minutes then transfer to a cooling rack.
