Ingredients You Need
Velveeta Cheese – For this dip I used white velveer. You are more than welcome to use a classic velveeta in replace.
Rotel – Diced tomatoes with green Chili’s are what Rotel is made of. You can buy mild, regular, hot, etc.
Variations To Recipe
- Add in cooked ground beef, sausage or chorizo!
- Add a splash of milk to make a thinner cheese dip.
- Sprinkle on pickled or fresh jalapeños at end for added flavor.

Step One: Dice up the velveeta cheese into cubes. This will help speed up the melting process.
Step Two: Add cheese and Rotel into a saucepan over medium heat. Stir often to prevent burning of cheese.
Pro Tip: Do not drain the juice in the canned tomatoes. This adds flavor and helps thin out the dip.
Step Three: Once fully melted pour in bowl and serve!
Storing
If you by chance have leftovers simply store in an airtight container. This Velveeta and Rotel dip stores for around 4-5 days.
The cheese dip does thicken as it is refrigerated. If you find after warming it’s too thick simply add a splash of milk.
Due to the dairy you will find Rotel dip doesn’t freeze well. The texture will be off once you thaw it.
Reheating Directions
To reheat this Velveeta Rotel dip just microwave for 30-second intervals. Stir between each heat cylinders. When your dip is melted serve.
Or you can place some dip in a saucepan on the stove and heat on low. Stir often to prevent burning.

Ingredients
- 16 ounces Velveeta I used white but classic works too
- 10 ounce can Rotel
Instructions
- Start by dicing up your Velveeta into cubes. Then place them in a pan and heat on medium-low heat.
- Now add your Rotel, juice and all.
- Mix until the cheese is fully melted. Make sure to stir often or it will burn on the bottom.
- Once the Velveeta cheese dip is fully melted, serve with chips, veggies, etc.
