Ingredients Needed
- Olive Oil
- Butter – I recommend using real butter instead of margarine.
- Onions – Yellow or white onions are best for this recipe. Don’t use red as it will offer a bitter taste to the gravy.
- Worcestershire Sauce – This is going to add a nice deep flavor to the gravy.
- Beef Stock – So we used beef stock but you can use bone broth, chicken stock, or if you want a vegetarian gravy use vegetable broth.
- Spices – Salt, Pepper, Thyme, and sage.
- Heavy Cream – The heavy cream is going to really add a creaminess to the gravy and help to thicken it even more.
Variations To Recipe
Mushrooms – Add in some sliced mushrooms to help add more depth.
Stock – Use chicken stock or vegetable stock in replace of beef if you want. I find beef offers the boldest flavor but feel free to swap with what you would like.
Spices – Swap out the spices you use. Onion powder, garlic powder also will add some dimension to your gravy.

Step One: Start by adding your oil and diced onions into a skillet on the stove. You will cook for around 5-8 minutes to help give the onions a nice golden color.
Step Two: Add in all your spices and seasonings and let them cook for a minute. Then pour in the beef broth and stir well.
Step Three: Bring the gravy mixture to a boil then reduce heat to simmer. It will take time for it to reduce, and then pour in the heavy cream. Whisk continuously to ensure it mixes properly.
Step Four: One the gravy is thickened, taste and season as you need then serve and enjoy this homemade gravy.
Helpful Tips
- Make sure that you take the time to saute the onions at first. The onions need to get golden brown to help bring out the rich flavors of the onions.
- Don’t cook too far and burn the onions.
- If your gravy is not thickening the way you want as you have let it cook, you can create a roux. Mix 1 tablespoon cold water and 1 tablespoon cornstarch and stir in at the very end, this will thicken the gravy.
- When making gravy make sure to stir often as it can curdle or burn very easily.
- Whisk often so lumps don’t develop.
Storing
This onion gravy can be stored in the refrigerator for 2-3 days. You will find that the gravy thickens a bit more once it chills down from being heated.
To reheat you can warm up in the microwave. Or toss on the stove and heat on low. If it is too thick add in more beef broth or heavy cream to help thin it out a bit.
