This Thai chicken curry is ready in 25 minutes and made in one skillet. I wanted something that could fit a lower carb diet, now if you want rice opt-in for cauliflower rice. You can make your own cauliflower rice, or you can find some in the freezer section and sometimes fridge section at your grocery store. This is a lower carb option, or skip the rice and naan bread and just eat the chicken coconut curry!

- 1/2 cup of diced onionsÂ
- 3 Tbsp of coconut oilÂ
- 1 1/2 lbs of boneless, skinless chicken thighsÂ
- 1 cup of bamboo shoots (optional)Â
- 2 Tbsp of curry powderÂ
- 2 Tbsp of paprikaÂ
- 1 tsp of fresh minced ginger (ground ginger will also work)Â
- 1 1/4 cup of coconut milkÂ
- 1/4 cup of heavy whipping creamÂ
- Salt & Pepper to tasteÂ
Directions for Coconut Curry Chicken Recipe
Start by heating the coconut oil over medium-high heat. Toss in your onions, bamboo shoots, and diced chicken and saute for about 5 minutes.
Add in your paprika, curry powder, and cook for 2-3 more minutes.
Next pour in your coconut milk, whipping cream, and salt and pepper to taste. Stir well,, and then simmer for 15 minutes on medium-low heat.Â
