Coconut Curry Chicken
Easy to make and this coconut curry chicken is a one-pot dish that will feed a hungry family.

- 1/2 cup of diced onions
- 3 Tbsp of coconut oil
- 1 1/2 lbs of boneless skinless chicken thighs
- 1 cup of bamboo shoots optional
- 2 Tbsp of curry powder
- 2 Tbsp of paprika
- 1 tsp of fresh minced ginger ground ginger will also work
- 1 1/4 cup of coconut milk
- 1/4 cup of heavy whipping cream
- Salt & Pepper to taste
Start by heating the coconut oil over medium-high heat. Toss in your onions, bamboo shoots, and diced chicken and saute for about 5 minutes.
Add in your paprika, curry powder, and cook for 2-3 more minutes.
Next pour in your coconut milk, whipping cream, and salt and pepper to taste. Stir well,, and then simmer for 15 minutes on medium-low heat.
Serve and enjoy.
