What Are The Best Potatoes For Loaded Potato Soup
I personally use russets for my potato soup. Russets release more starch so it offers more of a creamy texture as it bakes down. You could also use Yukon if you would prefer.
Best Cheese for the Loaded Potato Soup
Use Velveeta! It will help thicken the soup slightly and offer a really rich and creamy texture to the soup. If you use bagged shredded cheese it will separate and you won’t get that creamy texture within the soup that you want.

A lot of times I pair my Cloverleaf rolls next to my potato soup recipe. We dip our rolls into the soup and it is like a soup bowl taste but with less hassle!

I flavor my soup with chicken stock, Velveeta cheese and then some seasonings. It gives it a really creamy and cheesy taste without being overbearing. Then I leave in some of the bacon grease so that it helps to add another dimension of flavor.
How Do You Thicken Potato Soup Without Flour
I thicken my loaded potato soup with a cornstarch and water slurry. Once your potatoes are cooked through, bring your soup to a boil, and add in your cold corn starch slurry, and it will begin to thicken the soup. Repeat the process until it reaches the thickness you want.

Ingredients
- 1 package of bacon diced
- 4 cups milk
- 1 -32 oz chicken stock
- 6 oz Velveeta
- 8 potatoes peeled and diced
- 2 tablespoons parsley flakes dried or fresh
- 1 tablespoon dried onions
- 1/4 cup corn starch
- 1/2 cup cold water
Instructions
- Start by cooking up your diced bacon. You want to ensure the bacon is cut nice and small. Drain some of the grease off, but leave some for flavor.
- Next add in your chicken stock and milk along with the parsley and dried onions. I cook over medium heat.
- Peel and dice up your potatoes and then add to the pot. Cook until the potatoes are tender and cooked through.
- Lower your heat down. Add in your Velveeta cheese and stir often or it will burn.
- Then create your cornstarch slurry of corn starch and cold water. Slowly pour into the soup and stir until thickens. If it isn't as thick as you like repeat the slurry over. It won't affect flavor.
- Once potatoes are cooked and nice and thick serve!

Slow Cooker Loaded Potato Soup Directions
If you want to fully make this in the slow cooker, add all the ingredients but the cornstarch and water. Cook on low for 8 hours. Then 30 minutes before you are ready to serve mix the cold water and cornstarch together. Stir it in and allow it to thicken.
Can You Freeze Loaded Potato Soup
Yes! You can freeze this soup. I will say the potatoes do break down slightly once they freeze and thaw. The texture will be slightly different but the flavor is still really tasty.
Freeze in an airtight container or in a freezer bag. We personally allow the soup to cool slightly, and then pour it in a freezer bag. Then when we remove as much air as we can. I found this freezer bag holder works really nice at helping pour soup in easily. They really help hold the bag in place so when I pour I don’t make a massive mess!
How to Reheat Loaded Potato Soup
Start by thawing your soup from the freezer the night before. Or if you are pulling out of the fridge just dump in a pan on the stove and warm it up slowly. Or if you are in a hurry, pour some in a bowl and heat in the microwave. Either way, it reheats nicely!
Can I Add Different Meat to Potato Soup
Yes! I have used diced ham and chicken in this potato soup in the past. You can keep the bacon or get rid of it.
A great way to use up leftover ham after holidays, or use up leftover chicken. Just make sure neither is highly seasoned or it will change the flavor of soup.
My husbands grandma even used shrimp, she said it was a wonderful way to add a new level of flavor and stretch the soup even farther.
