This easy smothered chicken breast was inspired by a restaurant I used to visit called Montana Mike’s. They had what was called the Mountain Topper Chicken, and it was my FAVORITE!

How To Make Blackstone Chicken Breast

Step 1: Cook the chicken
Start by heating the Blackstone to medium-high heat. Once hot, melt butter on the griddle. Add thin pieces of chicken and cook for 7 minutes then turn. Cook for an additional 8-10 minutes or until the chicken reaches 160 degrees F.

Step 2: Cook the bacon
While the chicken is cooking, begin cooking the bacon. Cook until crispy and set aside until the chicken is done.
Step 3: Cook the mushrooms
While the bacon is cooking, add some more butter to the Blackstone and add mushrooms. Flip as needed until they reach the desire texture, about 10 minutes.

Step 4: Put it all together
Once the chicken is done, add honey mustard to the chicken. Add the bacon and mushrooms. Sprinkle cheddar cheese and let rest for 2-3 minutes or until the cheese has melted. Garnish with parsley (if desired)

Nope, if you aren’t a fan of mushrooms, feel free to leave them off of this Blackstone chicken recipe! It’s going to be just as flavorful.
Allow the easy smothered chicken to cool down, the put it inside of a sealed container. Refrigerate for up to 4 days.
Microwave method: Place on a microwave safe dish and cover with a paper towel. Heat for 1-2 minutes or until hot all the way through.
Air fryer method: Place the chicken in the air fryer basket and heat at 375 for 5-7 minutes or until hot.
Oven method: Place the loaded chicken breast in a casserole dish and warm in a preheated oven (350 degrees) for 10-12 minutes or until hot.

Blackstone Griddle Loaded Chicken
Ingredients
- 2 boneless skinless chicken breast cut horizontally to make 4 chicken breasts
- 2 slices bacon
- 1/2 cup mushrooms fresh or frozen
- 4 tablespoons honey mustard
- 1 cup cheddar cheese shredded
- Butter for oiling griddle can use olive oil
Instructions
- Start by heating the Blackstone to medium-high heat. Once hot, melt butter on the griddle. Add thin pieces of chicken and cook for 7 minutes then turn. Cook for an additional 8-10 minutes or until the chicken reaches 160 degrees F.
- While the chicken is cooking, begin cooking the bacon. Cook until crispy and set aside until the chicken is done.
- While the bacon is cooking, add some more butter to the Blackstone and add mushrooms. Flip as needed until they reach the desire texture, about 10 minutes.
- Add 1 tablespoon of honey mustard to each chicken breast. Add 1/4 of the mushrooms and 1/4 of the bacon to each chicken breast. Sprinkle with 1/4 cup of shredded cheese. Sprinkle with parsley if desired.
- Let rest for 5 minutes, then serve.
Notes
- Uniform Sized Chicken – It’s helpful to cut the chicken so it’s sized the same. This way you don’t have to worry about some pieces cooking faster than others.
- Swap the mustard – If you don’t like honey mustard, feel free to use Dijon instead. Both are delicious!
- Shred the cheese – I know you may want to save yourself a step, but it’s so much better when you shred the cheese yourself. YUM!
