  • 6 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 cup butter divided
  • ¼ cup minced onions
  • 6 cloves garlic minced
  • 1 cup white wine or chicken broth
  • ¼ cup fresh lemon juice about 2 lemons
  • ¼ cup diced sun-dried tomatoes
  • ¼ cup chopped fresh basil
  • 1 8 ounce package goat cheese, room temperature

Instructions

  • Heat your grill or pan to medium-high heat.
  • While the pan is heating, you will add oil to both sides of each chicken breast. Then season liberally with salt and pepper on both sides.
  • Place the chicken on the grill or pan and cook for 3-4 minutes or until the edges of the chicken turn white.
  • Flip the chicken over and cook another 3-5 minutes or until the chicken reaches 165 degrees. Place the cooked chicken on a plate and allow it to rest for 5 minutes.
  • While the chicken is resting place butter in a saucepan. Add in 2 tablespoons of butter and let it melt. Then add in the onions and garlic and cook till soft.
  • Add in the wine and lemon juice. Bring to a boil, and then lower the heat to medium-low heat. Simmer the sauce for 10 minutes stirring occassionally.
  • Stir in the basil and sun-dried tomatoes. Remove the lemon butter sauce form the heat.
  • Now, slice the room temperature goat cheese into slices and place a slice on top of the chicken breast. Then drizzle the lemon sauce over the grilled chicken.

Notes

You can slice the chicken in half to make thinner slices of chicken if you want.
Reach for chicken stock to replace white wine if you do not want to use white wine.
Store any leftover chicken in an airtight container in the fridge for 2-3 days.
