Christmas Shortbread Cookies is a classic shortbread cookie recipe dipped in white chocolate and decorated for Christmas. Give this holiday cookie recipe a try for the holidays.

Preheat your oven to 350 degrees and grease or line baking sheets with parchment paper to prevent sticking.
Then with a hand mixer or stand mixer you will cream the softened butter and granulated sugar together. You will mix for 2-3 minutes to get it nice and fluffy.
Add in the vanilla extract then slowly mix in the flour to incorporate into the cookie dough.
Once dough is mixed, sprinkle a little extra flour on work surface and roll out the cookie dough to 1/4 inch thick.
Then use a round cookie cutter and make 40 cookies. Place them on your cookie sheets, and bake for 12-15 minutes or until done. If you need batch cook them.
Allow the cookies to fully cool on a cooling rack.
Then in a microwave safe bowl you will heat up the chocolate for 20-30 second intervals and then stir between each heat cycle till melted.
Dip 1/3 of the cookie in the white chocolate and place on a wax paper lined work space. Then add two leaf sprinkles and a red dot sprinkle. Or decorate as you would like.
Once the chocolate is set, store the Christmas shortbread cookies in an airtight container and enjoy.
Notes
Storage - Store your cookies in an airtight or sealed container for 4-5 days. Or you can freeze your cookies for 2-3 months. Decorating - Feel free to decorate your cookies any way you want. I loved the wreath style sprinkles. Icing - If you want to replace white chocolate with icing go right ahead. I love white chocolate with shortbread cookies.
