Ingredients

  • 1 pound ground beef
  • 2 cups beef stock or bone broth
  • 10 oz can Rotel
  • 2 tablespoons taco seasoning
  • 1 1/2 cups long grain white rice rinsed and drained
  • Tortilla Chips

Toppings

  • Limes
  • Sour cream
  • Salsa
  • Jalapenos
  • Black Olives
  • Etc

Instructions

  • Turn your Instant Pot on the saute feature. Add your raw ground beef and cook until the beef is no longer pink and fully cooked.
  • Now you will add in your taco seasoning, and stir mixing it in with the ground beef.
  • Now pour in your beef broth and Rotel. You do not need to drain the Rotel before pouring in.
  • Give the mixture a stir, and pour in your rinsed and drained white rice. Gently stir just enough to incorporate the rice into the liquid.
  • Put the Instant Pot lid on, in the sealing position, and select Rice on your pressure cooker. Or do LOW pressure for 12 minutes.
  • Do a quick release, stir, and serve up your Instant Pot beef nachos with chips and all your favorite toppings.
