Mexican Chicken Spaghetti

Mexican chicken spaghetti is a delicious and easy-to-make baked pasta dish that features shredded chicken, spaghetti noodles, taco seasoning and more. Top it off with shredded cheese and serve with a side of beans or rice for a complete and satisfying meal.

Ingredients

  • 8 ounces thin spaghetti or angel hair pasta cooked according to package directions
  • 2 cups cooked chicken chopped or shredded
  • 2 cups Mexican blend cheese divided
  • 2 cans 10 ounces each cream of chicken soup
  • 1 cup sour cream
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • Fresh chopped cilantro for topping optional

Instructions

  • Begin by greasing a baking dish with cooking spray and set it aside.
  • Cook the pasta according to the package instructions and set it aside.
  • In a large bowl, combine the cooked pasta, shredded chicken, one cup of cheese, cream of chicken soup, sour cream, salsa, and taco seasoning.
  • Transfer the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining cheese on top of the spaghetti mixture.
  • Cover the baking dish with foil and bake it in a preheated oven at 350F for 25-30 minutes or until the cheese is melted and bubbly.
  • Once done, remove the dish from the oven and let it cool slightly before serving. Enjoy!

Notes

Chicken - You can use shredded or diced chicken. If you don't have any made in advance you can use a rotisserie chicken. Or cook your chicken in a skillet or oven and then dice up for the casserole. 
Pasta - Cook your pasta till al dente if you don't want a softer pasta in the casserole. 
Vegetables - If you want you can add in some drained canned corn or frozen corn. Or drain and rinse beans and mix in for added protein.
