Mexican chicken spaghetti is a delicious and easy-to-make baked pasta dish that features shredded chicken, spaghetti noodles, taco seasoning and more. Top it off with shredded cheese and serve with a side of beans or rice for a complete and satisfying meal.
8ouncesthin spaghetti or angel hair pastacooked according to package directions
2cupscooked chickenchopped or shredded
2cupsMexican blend cheesedivided
2cans10 ounces each cream of chicken soup
1cupsour cream
1cupsalsa
1tablespoontaco seasoning
Fresh chopped cilantro for toppingoptional
Instructions
Begin by greasing a baking dish with cooking spray and set it aside.
Cook the pasta according to the package instructions and set it aside.
In a large bowl, combine the cooked pasta, shredded chicken, one cup of cheese, cream of chicken soup, sour cream, salsa, and taco seasoning.
Transfer the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining cheese on top of the spaghetti mixture.
Cover the baking dish with foil and bake it in a preheated oven at 350F for 25-30 minutes or until the cheese is melted and bubbly.
Once done, remove the dish from the oven and let it cool slightly before serving. Enjoy!
Notes
Chicken - You can use shredded or diced chicken. If you don't have any made in advance you can use a rotisserie chicken. Or cook your chicken in a skillet or oven and then dice up for the casserole. Pasta - Cook your pasta till al dente if you don't want a softer pasta in the casserole. Vegetables - If you want you can add in some drained canned corn or frozen corn. Or drain and rinse beans and mix in for added protein.
