Carrot Cake Sandwich Cookies

Carrot cake sandwich cookies are an easy cake mix carrot cake cookie that is filled with cream cheese frosting. This carrot cake cookie recipe is a huge hit for Easter and spring entertaining.

Ingredients

  • 1 15.25-ounce box carrot cake mix
  • ½ cup vegetable oil
  • 2 eggs
  • 1 container whipped cream cheese frosting

Instructions

  • Preheat the oven to 350 degrees, and line cookie sheet with silicone baking mat or parchment paper.
  • In a large bowl add your cake mix, oil, and eggs. Mix with a hand mixer, stand mixer, or with a whisk. Mix well till combined.
  • Use a cookie scoop and scoop up the cookie dough into balls and place them about 2 inches apart. Lightly press down on the ball and bake for 9-11 minutes.
  • Once the cookies are done place on a cooling rack to allow the cookies to cool.
  • Then once cookies are done place a layer of cream cheese frosting on the bottom of one cookie. Then sandwich a second cookie on top to make a sandwich cookie.

Notes

Cookies: If you do not want to make sandwich cookies you can simply cake cookies without the frosting filling. 
Frosting: Any flavor of frosting works. You can even make homemade frosting if you want. 
Sprinkles: Place sprinkles on a plate and roll the cookies in sprinkles so the frosting picks up the sprinkles to make a colorful cookie. 
Cake Mix: You can use any flavor of cake mix to make the cookies.
