Chocolate Mint Donuts are a chocolate baked donut that is then iced with a mint icing. This is a Thin Mint donut inspired by the famous Girl Scouts cookie. Give this easy homemade donut recipe a try.

Preheat the oven to 350 degrees and grease the donut pan and set aside.
Then in a large bowl add your dry ingredients. Flour, sugar, baking soda, baking powder, cocoa powder and salt. Stir to combine.
Add in the melted oil and the buttermilk and mix well.
Once donut batter is mixed pour into a piping bag or Ziploc bag that you cut the corner off in. Pipe the batter in the wells of the donut pan. Do around 2/3rds the way full.
Bake for 8 minutes or until the donuts are fully done.
Remove pan from the oven and let donuts sit for 5 minutes in pan before you try to remove and place on cooling rack.
For the mint icing you will melt white chocolate chips in the coconut oil in the microwave stirring every 30 seconds heat cycles Repeat until the chocolate is fully melted.
Then add in the mint extract, and add in the green food coloring if you want.
Take your cooled donuts and dip in the green icing and let a little drip off then place on a cooling rack.
For chocolate drizzle melt dark chocolate and coconut oil in microwave for 30 second intervals. Stir and heat until melted. Then drizzle the melted chocolate over the green icing.
Notes
Icing - You don't have to color your icing green, but I find it gave the donuts a fun Thin Mint girl scout cookie look. Drizzle - The drizzle of dark chocolate adds design but added flavor. Just let the chocolate set up before serving. Storing - You can store your donuts at room temperature on the counter or in the fridge. Donuts will also freeze for up to 3-4 months.
