Oatmeal Coconut Chocolate Chip Cookies Recipe

Ingredients

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup butter softened
  • 2 eggs room temperature
  • 2 cups flour
  • 2 cups oatmeal old fashioned
  • 1 cup mini chocolate chips milk or semi-sweet
  • 3/4 cup coconut flakes unsweetened
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  • Preheat your oven to 350 degrees. Then in a stand mixer, beat your butter and sugars together until light and fluffy. You want it to really get whipped, this takes around 2-3 minutes. 
  • Once fluffy add in your eggs and vanilla to the mix. 
  • In a small bowl, add in your oats, flour, baking soda, baking powder, cinnamon, and salt. Stir. Then slowly add in the mixture to the wet ingredients till well combined. 
  • Turn mixer off, and pour in coconut, and chocolate chips. 
  • Fold it all in with a spatula, and spoon it onto a greased cookie sheet. 
  • Bake for 8-10 minutes or until cooked and lightly golden brown. They will be soft, so let them sit on cookie sheet for about 2 to 3 minutes then transfer to a cooling rack.
