Preheat your oven to 350 degrees. Then in a stand mixer, beat your butter and sugars together until light and fluffy. You want it to really get whipped, this takes around 2-3 minutes.
Once fluffy add in your eggs and vanilla to the mix.
In a small bowl, add in your oats, flour, baking soda, baking powder, cinnamon, and salt. Stir. Then slowly add in the mixture to the wet ingredients till well combined.
Turn mixer off, and pour in coconut, and chocolate chips.
Fold it all in with a spatula, and spoon it onto a greased cookie sheet.
Bake for 8-10 minutes or until cooked and lightly golden brown. They will be soft, so let them sit on cookie sheet for about 2 to 3 minutes then transfer to a cooling rack.
