Tuscan Chicken is a fantastic easy chicken recipe. Made with juicy chicken breasts, fresh spinach, sundried tomatoes, smothered in a creamy Italian seaoned cream sauce.
Heat a large skillet on medium heat with a little oil in the pan.
Season your chicken with the salt, pepper, and Italian seasoning. Do both sides of the meat. Then place the chicken in a single layer in the pan.
Sear one side for 4-5 minutes or until golden brown. then flip and repeat on the oher side of the chicken. You want to ensure the chicken is fully cooked. The internal temperaure should read 165 degrees F.
Increase the heat to medium-high, and add in the chicken broht. Use a woodne spoon to lightly scrape the botom of the pan to remove any stuck on bits.
Next you will stir in the heavy cream slowly, and reduce hte heat to medium. Alllow the mixture to simmer and reduce by half. This takes around 8-10 minutes.
Add in the sundried tomatoes and spinach, and cook until the spinach is wiled.
Dish up the chicken, and top with parmesan cheese and some fresh lemon juice.
Notes
Chicken: Any cut of chicken can be used, but make sure the chicken fully cooks. Different cuts of bone-in chicken will take longer to cook. Sauce: You can use half and half instead of heavy cream to lighten the dish a bit. I do recommend using a whisk to get a creamy sauce. Lemon: The fresh lemon juice is optional but it will enhance the flavors tremendously.
