Texas Twinkies are a fully loaded stuffed jalapeno pepper. This pepper is loaded with cream cheese, brisket, and wrapped in bacon. Toss on the grill or bake in the oven.
Slice your jalapenos in half, and then de-seed the peppers and remove the white membrane.
Rinse peppers under cold water to remove oils and wash off any lefotver seeds.
Spread cream cheese that is softened on both sides of the peppers. Leave room for the brisket.
Next add some brisket on top and press it into the crem cheese to hold it in place.
Press the pepper back together and then wrap in a strip of bacon. Begin at one end of pepper and twist the bacon around the pepper working it down the pepper. Secure with toothpicks to hold the bacon in place.
Oven Baked Method
Preheat oven to 400 degrees. Then place peppers in a single layer on a rimmed baking sheet. You can place the pepeprs on a wire rack on top of the baking sheet to allow the grease to drip off peppers.
Bake for 20-30 minutes or until the bacon is cooked all the way through.
Grilling Method
To grill peppers you will heat grill to 400 degrees.
Place the peppers on the grill and cook for 3-4 minutes, rotating the peppers. That way all sides of the peppers and bacon get an even cook. Once the bacon is fully cooked then remove from the grill.
Smoker Method
Preheat your smoker to 275 degrees.
Place peppers on a wire rack, and cook for 60-90 minutes or until the bacon is fully cooked.

Peppers - The bigger the better when it comes to stuffing Jalapenos. Spice - If you want peppers to have some spice then leave some seeds in the peppers. To make it mild remove the seeds and membrane. Meat - If you don't want to use brisket swap with any cooked meat. Pulled pork, chicken, sausage, etc. Cheese - Feel free to add shredded cheese to elevate the flavor. Cook Time: No matter the method of cooking know that the cook time will vary depending on the size of your peppers and the thickness of bacon.
