In a bowl add your honey, lime juice and lime zest. Mix well and set to the side.
Next you will wash and finely chop the strawberries, jalapeno, red onion, and cilantro. Add it to the bowl with the sauce.
Toss well and season with salt and pepper as you would like.

Jalapeno - Remove the seeds and white membrane to create a mild salsa. Or leave some seeds if you want some heat to the salsa. Use gloves when working with jalapenos as the oil can be harsh on sensitive skin. Refrigerate - Allowing the salsa to refrigerate for 30 minutes is going to blend the flavors even more. Now you do not have to refrigerate for 30 minutes. You can serve it up right away. Onion - If you don't want red onion you can finely chop green onions for a twist in flavor.
