  • 2 eggs room temperature
  • 1 tablespoon almond flour finely ground
  • 1 tablespoon pumpkin pie spice
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon vanilla
  • ¼ cup pumpkin puree

Toppings

  • :1 tablespoon crushed pecans
  • Butter
  • Sugar free syrup optional

Instructions

  • Spray your waffle maker with cookie spray and then turn it on to preheat. I used the mini dash waffle maker.
  • In a bowl, you will mix your eggs, vanilla, pumpkin puree, almond flour, and pumpkin pie spice. Give a good mix until combined.
  • Now fold in the mozzarella cheese and mix until fully mixed.
  • Pour 1/4 of the pumpkin chaffle batter into the hot waffle iron. Cook for 2-4 minutes or until fully cooked.
  • Remove from waffle iron and repeat. This pumpkin spice chaffle recipe makes 4 in the mini dash iron.
  • Top your keto pumpkin chaffles with butter, sugar free syrup, and chopped pecans. Or however, you would like.
