Instructions
Spray your waffle maker with cookie spray and then turn it on to preheat. I used the
mini dash waffle maker
.
In a bowl, you will mix your eggs, vanilla, pumpkin puree, almond flour, and pumpkin pie spice. Give a good mix until combined.
Now fold in the mozzarella cheese and mix until fully mixed.
Pour 1/4 of the pumpkin chaffle batter into the hot waffle iron. Cook for 2-4 minutes or until fully cooked.
Remove from waffle iron and repeat. This pumpkin spice chaffle recipe makes 4 in the mini dash iron.
Top your keto pumpkin chaffles with butter, sugar free syrup, and chopped pecans. Or however, you would like.
