Ingredients

  • 2 cups heavy cream
  • 1/4 teaspoon salt optional (for salted butter)

Instructions

  • In a stand mixer with the whisk attachment you will add your heavy whipping cream.
  • Then you will turn on medium speed and let it blend for around 10 minutes.
  • As it gets mixed you will see butter begin to develop. Keep mixing until you have the desired amount of butter in the bowl. It will only make so much but when it first forms just keep speed the same to keep whipping more butter.
  • Then you will remove the butter and pour out the buttermilk into a separate container. Store the buttermilk in the fridge.
  • If you want salted butter then add butter back to mixer or mix by hand and stir in the salt.
  • Leave it as whipped butter, and refrigerate until ready to use. Or you can place the butter in a bowl of ice and water.
  • Let it sit for a minute then with a cheesecloth lift butter out of water and squeeze out the liquid. Do this 3-4 times to make a firmer butter.
  • Once your butter is done, you can shape into a ball and store in the fridge until ready to use.

Notes

Mason Jar Method

  1. Add heavy whipping cream to jar and seal it tight.
  2. Shake for 15-25 minutes or until butter forms. You have to shake vigorously for it to work.
  3. Remove the buttermilk from butter and follow the same directions as above.
Storing - Store in the fridge for up to 5 days, or freeze for 6 months.
Wrap Butter - Wrap butter in parchment paper or wax paper to preserve the butter. Then place in a sealed container.
