Equipment

Ingredients

  • 2 avocados
  • 1 pound cherry tomatoes or grape tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 lemon juiced
  • 1 1/2 tablespoons olive oil
  • salt
  • pepper
  • fresh herbs optional (to taste)

Instructions

  • Start by washing all the produce thoroughly to ensure they are clean and ready for use.
  • Cut the English cucumber into quarters lengthwise and then dice it into bite-sized pieces. Add these crisp cucumber chunks to a spacious bowl.
  • Half the cherry tomatoes and add them to the bowl with the cucumber. Their vibrant red hue will beautifully contrast with the green avocado.
  • Peel and dice the creamy avocados, then gently add them to the bowl with the cucumber and cherry tomatoes.
  • Thinly slice the red onions to achieve delicate, paper-thin slices. Incorporate these into the bowl with the other ingredients.
  • Juice a lemon and sprinkle its zesty freshness over the contents of the bowl. This step adds a delightful tang to the salad.
  • Enhance the salad's richness and flavor by drizzling a tablespoon of extra virgin olive oil over the ingredients.
  • Finally, season the mixture with a pinch of salt and a dash of black pepper. Adjust the seasoning according to your taste preferences.
  • Gently mix all the ingredients until they are well combined. Once mixed, refrigerate the salad for a refreshing and chilled serving.
