Instant Pot Lazy Lasagna with Meatballs

Instant Pot Lazy Lasagna is made with frozen meatballs. Simple ingredients and just 5 minutes of prep are all it takes to throw this cheater lasagna a try. All the flavors of a classic lasagna without the prep.

Ingredients

  • 1 ¾ cups water
  • 20-26 frozen Italian-style meatballs
  • 8 oz uncooked farfalle bowtie pasta
  • 1 jar 26 oz jar pasta sauce
  • 1 teaspoon Italian seasoning
  • 1 1/3 cup mozzarella
  • ½ cup ricotta
  • ½ cup shredded parmesan cheese
  • 3 tablespoons cup chopped fresh basil optional

Instructions

  • Start by adding your water and meatballs into the Instant Pot. On top you will add your dry pasta.
  • Pour the pasta sauce evenly over the pasta, covering it. Then add on the Italian seasoning. DO NOT stir.
  • Place the lid on the Instant Pot, making sure the valve is set to sealing. Do manual high pressure for 4 minutes. Once the mixture is done cooking let it natural release for 4 minutes. Release the remaining pressure off the Instant Pot.
  • Stir in the ricotta cheese, mozzarella, and parmesan cheese. Stir in the basil if you chose to use some.
  • Serve your Instant Pot lazy lasagna with garlic bread, veggies, salad, or any other of your favorite sides.

Notes

This can be made in the Ninja Foodi, just use the pressure cooker lid.
Make sure the noodles are fully covered in the sauce, or they will be dry.
I used a 6 quart Instant Pot to make this.
You can swap the ricotta cheese with cottage cheese if you want.
Basil is optional but it does add more flavor.
Any smaller-sized pasta will work, even gluten-free for this recipe.
You can use homemade meatballs if you prefer. The cook time will remain the same.

How to Make This Lazy Lasagna Into A Freezer Meal

1. Add the meatballs into a bag along with the pasta sauce and Italian Seasoning.
2 Now seal up the bag and freeze for up to three months in the freezer.
3. To cook from frozen add pasta and water into the Instant Pot. Top with the frozen mixture, and place the lid on the pressure cooker. Cook for 4 minutes followed by 2 minutes of natural release. Quick-release remaining pressure.
4. Stir in the cheeses and basil, and serve up with your favorite sides.
