Chicken Alfredo

Chicken Alfredo is a popular Italian dish that is thicker pasta, creamy homemade alfredo sauce, chicken and I tossed some broccoli in. Give this homemade easy chicken alfredo recipe a try. One pot dish!

Ingredients

  • 1 tablespoon unsalted butter
  • 2 large cloves garlic minced
  • 2 cups half and half
  • 1/2 cup water
  • 1 cup mozzarella cheese grated
  • ¾ teaspoon sea salt
  • 1/8 cup parmesan
  • 2 cups cooked chicken shredded rotisserie chicken or chopped chicken thighs work well
  • 7 circles tagliatelle noodles
  • 2 cups broccoli finely chopped (optional)

Instructions

  • In a large skillet you will start by heating up your butter until it is melted. Toss in the garlic and cook for 2-3 minutes to allow it to become fragrant.
  • Now you will whisk in your half and half, water, and sprinkle in the sea salt. Turn the heat to medium stirring continously.
  • Now you will place your tagliatelle noodles in the cream sauce and cover with a lid. You will find the mixture will boil after you cover the pan.
  • Cook for 5-7 minutes, make sure to watch the dish so it doens't over-boil and spill out.
  • Use tongs to flip the round noodles over and cover back up for an additional 3 minutes.
  • Remove the lid and stir and when your pasta is close to done, you will add in the mozzarella cheese. Turn the heat down a little to low-medium heat. Stir often, and toss in broccoli, and cooked diced or shredded chicken.
  • Remove from heat, and allow the mixture to sit with the lid on for 5-10 minutes.
  • Top with salt, pepper, and parmesan. This is a delicious one pot alfredo recipe.

Notes

If you want to use fettuccine noodles just cook them in a separate pan as directed. Then drain and toss into the sauce at the end of cooking.
You can pan-sear chicken that has been seasoned with salt and pepper if you would like. I would dice into 1-inch cubes and then cook till fully done, then move on to sauce if you don't have pre-cooked chicken on hand.
Feel free to leave out the broccoli if you would like.
Store leftover alfredo chicken in the fridge for a few days. This dish due to the sauce does not freeze well.
