Ingredients

  • 8 Dill Pickles I did whole pickles, but can use spears
  • 4 oz softened cream cheese
  • 8 slices of bacon

Instructions

  • Start by slicing your whole pickles in half lengthwise. Then use a spoon to scrape out the centers of the pickles so you make a well.
  • Place the pickles on a paper towel to help soak up the excess juice.
  • Take a bit of the cream cheese and fill one side of the pickle. Then place the other side of the pickle on top. You want it to close up nicely.
  • Wrap one slice of bacon around the pickle, and use a toothpick to secure the bacon onto the pickles.
  • Preheat your grill, we did ours on a pellet grill. We set temperature for 500 degrees.
  • Toss the pickles on the grill and cook for 2-3 minutes and check to see if you need to rotate the bacon wrapped pickles.
  • You want to rotate the pickles around until all the bacon is fully cooked.
  • Once the bacon is completely cooked, remove from grill and allow to cool 5 minutes before serving.
  • Serve alone or pair with a ranch dressing or any of your favorite dipping sauces.

Notes

Depending on how thick your bacon is will depend how fast or slow your bacon cooks. So use your best judgement in terms of the bacon being fully cooked.
Air Fry: Cook your bacon wrapped pickles at 375 degrees in your air fryer. Every 4-5 minutes you will want to turn it just a bit, to ensure you get an even cook on your bacon. Once the bacon is cooked the pickles are done.
It is best to use whole pickles for this recipe, so the cream cheese stays inside the pickle.
