Corn Dog Muffins

Corn Dog Muffins are a delicious homemade corn dog batter that is then paired with a diced hot dog and baked in a muffin tin. A poppable snack or appetizer to serve up. A kid-friendly hot dog recipe that is perfect for dipping in your favorite sauce.

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all purpose flour
  • 8 hot dogs cut into 1-inch pieces
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup canola oil

Instructions

  • Preheat your oven to 425 degrees F. Then grease your mini muffin pan and set it to the side.
  • In a large bowl you will add your flour, cornmeal, sugar, baking powder and salt. Mix to combine.
  • Next add in the egg, milk and oil. Mix well to incorporate the ingredients. Scrape down the side of the bowl.
  • Spoon around a tablespoon of the corn batter into the muffin tin.
  • Press one of the diced hot dogs in the center of each muffin cup.
  • Bake for 8-10 minutes or until the corn bread is baked fully.
  • Serve warm with your favorite dipping sauces.

Notes

Cornbread - Want to use a cornbread mix from the grocery store. Just mix up the cornbread box as directed on package. Then adjust cook time if needed. 
Hot Dogs - If you don't want to do a hot dog do a smoked sausage or even Lil' smokie.
