Chicken Lollipops are a delicious seasoned chicken drumsticks. Smoked chicken that is restaurant quality chicken lollipops. A great appetizer or dinner to serve up your family.
Then pat dry the chicken drumsticks with a paper towel.
Then with a sharp knife you will make a cut in the skin, through the tendons, in the middle of the bone. Under the knuckle of the drumstick.
Then you will use your hands to push down the skin and meat to the end of the chicken. If you need to cut more of the meat do-so to get all the chicken meat and skin to the top of the chicken leg.
Now you will brush your chicken with oil, and then add your seasoning to the meat. Make sure to coat all sides of the chicken.
If your chicken won't stand up meat side down you can trim the meat or skin so it is flatter and will stand up.
Place the drumsticks on the smoker/grill meat side down, and cook for about 2 hours. I put the chicken direction on the grates. Cook until the chicken reaches 165 degrees internally.
Once the chicken is done, remove from the smoker/grill and let it rest 5 minutes, then serve the lollipop chicken with your favorite dipping sauces.

Cook Time - Depending on your grill or smoker the cook time can vary a bit. Grill - I used a Traeger Wood Pellet Smoker for this recipe. Seasoning - You can season your chicken any way you want. Go simple or complex if you want.
