Ingredients

  • 1 Red Velvet Cake Mix 15.25 ounce
  • 2 large eggs room temperature
  • 1/3 cup oil
  • 1/2 cup white chocolate chips

Instructions

  • Preheat the oven to 350 degrees. Then grease your baking sheet or line with parchment paper or a silicone baking mat.
  • In a bowl you will add your cake mix, eggs, and oil.
  • Mix well until combined, and then fold in your white chocolate chips.
  • Use a 1 1/2 tablespoon cookie scoop and place cookie dough on baking sheet, leaving space between each cookie.
  • Bake for 8-12 minutes or until the cookies are cooked.
  • Place cookies on a cooling rack and allow them to cool.
  • Store your red velvet cake mix cookies in an airtight container on the counter at room temperature. Or you can freeze the cookies.

Notes

Cake Mix - Use any brand or flavor of cake mix if you would like. 15.25 ounce box is what I used.
Chocolate Chips - Swap the white chocolate chips with other flavors like semi-sweet, or even milk chocolate.
Decorate Cookies - Add extra white chocolate chips on the cookies once on baking sheet to give it a nice look.
Canola or Vegetable oil work best for this cake mix cookie recipe.
Store the cookies in an airtight container or freeze them. Make sure the cookies are fully cooled before you store them, to prevent condensation from building on cookies.
Mix ins - Add in chopped candy, cut up Andes mints, etc. Feel free to have fun and create a cookie that fits what you are looking for.
