Take the salt and pepper and sprinkle them all over the roast. You will want to work on both sides. If you need to, add a bit more salt and pepper depending on the size of your roast.

Sear the roast on both sides till it forms a golden brown crust. Toss in the onions and let them sauté for a few minutes to soften.

Turn off the sauté mode or transfer the pot roast and onions to the crockpot. Add in the beef stock, onion soup mix, and Worcestershire sauce. Stir well to make sure mixed.

Add the potatoes and carrots that have been prepped. Cover and cook on low heat for 8–9 hours.

If you want to thicken the gravy, then about 20 minutes before serving add cold water and cornstarch in a bowl. Whisk to combine.
