Instant Pot Chicken Tacos is an adobo shredded chicken taco that I transformed into a walking taco. Aka traveling taco. Seasoned shredded chicken, piled high with all your favorite taco toppings.
3chipoltes from chipoltes in adobochopped (if you can't take heat do 1/2 pepper)
1can diced tomatoes
1can black beansdrained and rinsed
Extra Ingredients
Single serve bags of Frito Chips
Shredded Lettuce
Shredded cheese
Salsa
Sour Cream
Etc
Instructions
In your Instant Pot you will add your water, taco seasoning, chipoltes and some sauce, diced tomatoes, and black beans. Give a good stir, then drop in your raw chicken breasts.
Place the lid on the pressure cooker and make sure the valve is set to sealing. Then do a 5 minute high pressure cook, followed by a quick release.
Open the Instant Pot and remove the chicken carefully. Use meat claws or forks to shred the cooked chicken.
Place the cooked chicken back into the Instant Pot, stir well, and then assemble your walking tacos. Or serve the chicken with rice, on soft tortillas, etc.
For walking tacos, open single serve bag of Fritos or Dorito chips. Add in some chicken mix, and pile with your favorite toppings.
Notes
Chicken needs to reach an internal temperature of 165 degrees. If your chicken is not fully done, place lid back on the pressure cooker and cook an additional 3-4 minutes. Cook time does vary depending on how small or large your chicken is. Traveling Tacos : Any single serve bag of chip works, so have fun and create a taco bar if you want with all the options!
