Instant Pot Tortellini Soup is an easy and savory cheese tortellini soup. Sausage, cheese tortellini, veggies, kale and more come together! This is my favorite Instant Pot soup recipe that will blow your mind. You can make a thin or thick sauce as well! Plus I share slow cooker instructions as well.

Start by turning your Instant Pot to saute. Then once the pot is hot add in your ground sausage, carrots and onions. You will cook until the sausage is fully cooked, crumbled and browned. Drain off excess grease when done.
Now turn off the saute feature, and stir in your garlic. Stir for just a few seconds. You want it to become fragrant.
Pour in the chicken stock, and use a wooden spoon to scrape the bottom of the Instant Pot. You need to lift up any stuck on food, as this can give you a burn notice.
Now you will add in your Italian Seasoning, salt and pepper, tortellini, and push the tortellini into the stock so it is all covered. Add in your tomato paste, DO NOT STIR.
Place your lid on the pressure cooker. Make sure your valve is sealed on lid. Select high pressure/manual for 4 minutes. Followed by a quick release.
Open the lid and pour in your heavy cream and kale. Stir until the kale wilts to the texture you want.
Now you can mix the cornstarch and cold water together and stir into soup to help it thicken up if you want a thicker broth. If not you can skip this part.
Serve your sausage tortellini soup with parmesan cheese on top!

Slow Cooker Directions
Step 1: Cook your sausage, carrots, and onions in a skillet on the stove on medium heat. You will cook until fully cooked. Once done pour into your slow cooker. Remove excess grease. Step 2: Add in your chicken stock, Italian Seasoning, Garlic, tomato paste, and cook on low for 6 hours. Step 3: Then pour in your tortellini, and heavy cream. Stir and cook for another 15-30 minutes or until the tortellini is cooked. 7 minutes before you are ready to serve, toss in kale and let it wilt down.
Stove Top Directions
Step 1: You will saute your sausage, carrots, and onions just as the other versions on the stovetop in a heavy-duty pot. Once fully cooked stir in the garlic and mix until fragrant. Step 2: Drain off excess grease and then pour in broth Italian seasoning and bring to a boil. Once it reaches the boiling stage, reduce heat and simmer for 10-15 minutes. Step 3: Now stir in your heavy cream, diced kale, and tortellini and mix well and cook on simmer for 5-7 minutes. Step 4: If you want to thicken make the cornstarch slurry and turn heat up to medium and stir it in, and mix until thickens.
